    Hi everyone, day 3 of induction here.

    I was wondering about eggs benedict... other than the english muffin, a good eggs benedict sounds like a great way to do Atkins in the morning.

    Anyone have any creative suggestions as to what the egg, ham, and hollandaise sauce could go on as an alternative to an english muffin?

      You don't need the muffin. Just put the egg on top of the ham and put the hollandaise on top of it all.

      If you really want a "bottom", you can use an artichoke bottom or a portabello mushroom cap. The sticky above called "Induction Recipe basics" has a recipe for an Induction legal bread substitute that makes a suitable muffin sub.

        Would a Atkins Pancake work

        I bought the pancake and waffle mix to try it out. Maybe if it is allowed you can put your creation on a pancake. One pancake is 1.5gms I think I'm still figuring out the carbs.
        Official start day will be May 1st

        Mini goals Induction 201/180/165/
        OWL 140/125/110/100 I hope this is realistic if not I willing to change.

          Be careful with that Pancake and Waffle Mix. They recently re-formulated it and the older version was approved for OWL and beyond because it contained ingredients that were not on the Induction Acceptable Foods list.

          The current formulation contains a "low glycemic" corn starch...I would be wary of using this product during the Induction period.

            I make them over top of the flaxcakes. Yum. The recipe for flaxcakes should be up top.

              Or try making the microwaved flax bread in several small containers to make a sort of bun.
