I'm having baked fresh ham with sour cabbage and apples, flax corn muffins and fresh berries.

I'm a goalie but you can do it in OWL and in induction you can use jicama and the recipe for mock baked apples.

Okay, I just read another thread where 2Big mused about roasting cauliflower and adding tandoori spices to it. (Darn you 2Big!) So....

I'm changing my menu tonight--the veggie part at least.

            Lamb chops
Roasted curried cauliflower with sour cream
Raspberries and whipped cream (I'm in OWL)

Don't be turned off by the roasted cauliflower. It's really easy to do and very delicious. Pre-heat the oven to 375 degrees F. Cut the fresh cauliflower into florets (I also cut the stalks into 1/2 to 1 inch pieces). Toss with olive oil and spread onto a baking dish. Put in the oven and let it roast until it's a golden brown. You might have to stir the cauliflower around so it browns evenly. The browning is important because it gives the cauliflower a really nice toasty-sweet flavor. This takes about 30-45 minutes to do.

Remove from the oven and toss with curry powder and mix in a tablespoon of sour cream. You can also sautee some onions until they are golden brown too and mix them into the cauliflower.

Refrigerate the leftovers and serve cold or room temperature the next day as a salad.

I'm going to be very uncreative. Because I just worked a 9 and a half hour day I'm going to have a dozen buffalo wings and a salad again.

Mmmm you guys are making me hungry. I'm not creative so my meals are simple. I'll be working out tonight so I'll be home later.

Salmon (already cooked) or chicken (needs to be cooked)
Cauliflower 'tatoes with LOTS of butter <mmmm>
Might saute some onion to add to it

Dang... I'm chugging water until I get home! :nod

A flame grilled gardenburger with white cheddar and green chilies and on the side some steamed cabbage and surprise green beans (green beans cooked in melted butter and hot sauce).

I marinated chicken breast in a splash of soy sauce and some chopped garlic and I'm baking them. I coated them with almond flour and sesame seeds (I'm in OWL), but Inductioneers could roll them in finely crushed pork rinds..yummm!!
Serving it with a green salad, and I'm trying out roasted cauliflower tonight! It's in the oven right now and I'm pretty psyched to try it!

We both enjoyed the roasted cauliflower...I was pretty surprised to see that bf really liked it too.

For my lunch today I took the leftovers, mixed in some curry powder and sour cream as suggested, so I'm looking forward to that.

                          Re: Lasagne!!
If you want to have the more traditional oven-baked version, use thinly sliced rounds of zucchini as 'noodles'....it's awesome!! I slice them up on a mandolin-type thing and nuke them for a few minutes to slightly soften them before assembling the dish. They work really well.

This all sounds so good! I need to go grocery shopping! Maybe tomorrow...

Last night I made a nice ribeye with some cheddar cheese on top and green beans.

I think tonight I'm having Philly Cheesesteak, but without the roll...mmmm...
