    Okay guys, you know i like to post my hit recepies. I made this last night, and it was a knock out!


    Moist Meatloaf Patties

    2lbs Meatloaf mix (Pork,Beef,Veal)
    2 Diced Portobello Caps
    2 Eggs
    parsley
    2T minced Garlic
    Rosemary
    Kosher Salt

    Pan Gravy

    1 can Chicken Broth
    1 T Cream
    Kosher Salt
    Pepper


    Combined all the ingrediants for the meatloaf patties, form into 7 (or good size patties, cook in a skillet with a little bit of olive oil. When you are done, and I put a lid directly on the meat with two coffee cups on it to speed up cooking cause these are kinda sizable: drain some of the fat but leave the pan dripping, empty can of broth into pan, and slowly bring to a boil, when it starts to reduce add your cream. I used less then a T of cream, but you can use what you want. Wisk well, to get all of the pan dripping off the bottom, let reduce and serve.

    I served this with Cauliflower.


    This was the first time I had ever had portobellos, and I have to say, they are quite good. This recepie makes about 8 servings. I have to say only half of one filled me up last night. So this morning I had some left overs that I put in a Hefty Easy Close bag with the rest of the gravy and the patties, unzipped it alittle ways, and microwaved for about 5 minutes. They stay nice and moist because of the mushrooms. You can use any mushroom you want, but we figured cause they were nice and meaty, and new to us, we should give em a try. My husband LOVED them, and I was suprised to see such a warm reception to them.

    Im sure it would actually make a nice meat loaf too. I hope you guys enjoy this, it is a nice way to spice up your meat.

    The net carb count for the patties was 12.2 for 7 patties plus the pan gravy, 1.8 net carbs per serving.

    I was looking for a meatloaf type recipe and I think this looks really good. I am going to try it. Thanks for posting it - being a new kid on the block I am just learing how to cook all over again.
