it's all hubby will eat anyway

Basic Mayonnaise -- Condiments
This one recipe is a life-saver, and the recipe I use whenever mayonnaise is called for.
Basic Mayonnaise

Serving Size : 16 Preparation Time

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 egg
2 tsp lemon juice
1/2 tsp dry mustard
salt -- 1/16 tsp
cayenne pepper -- 1/16 tsp
1 c olive oil -- extra light
Boil egg for exactly 1 minute. (Boil water, carefully put egg in the hot water, time for 1 min) do not over cook, or you will have a soft boiled egg!
Put egg, lemon juice, salt, cayenne pepper & mustard into blender.
Begin to process.
While blending, slowly drizzle olive oil into the blender.
The oil will emulsify into mayonnaise.
Refrigerate.

Easy to make.
Hi I made this for the first time last night. Use a whole egg and add oil slowly. It works!

2 tsp Vinegar
1 tsp dry mustard
salt -- 1tsp
1 cup olive oil -- extra light
1) Blend all the ingredients apart from the Olive oil for 20 secs in a food processor.
2) While blending, slowly drizzle olive oil into the blender.
The oil will emulsify into mayonnaise.Male 47yrs 5' 10"
