    What's everyone having for lunch today?

    I made a Chicken BLT Bowl, and it was DEEEE-Lish!

    It's pretty self-explanatory, but here's the recipe if anyone's interested:

    1 Breast of Grilled Chicken - cut into chunks
    4-5 slices bacon - cooked & crumbled
    1/4 cup (1 small) roma or plum tomato - diced
    1 cup romaine - chopped
    3 Tbsp. Mayo

    Mix together in a bowl & enjoy! This will be a good dish to keep on hand in the fridge because it probably keeps a bit longer than salad. It's good cold too, so it's a good lunch to take to work.

    What's everyone else having? I love getting new ideas.

    We had a crustless quiche with a cup of mixed salad, a few slices of cucumber, a couple of cherry tomatoes and 1/2 cup of sliced mushrooms (I am on OWL so can eat more than 3 cups of veggies in one day)

      It's 10:30 here! no lunch, yet. i plan on shopping today to stock up on cucumebrs and peppers. Last night, though, I made a BLT club sandwich.

      Simple- Use lettuce leaf as tortilla to roll. Inside I put slices of turkey, mayo, s/p, bacon, and tomato and a slice of swiss. I usually have soem blue cheese and ccumebrs or peppers on the side.
