    Have just started the Atkins programme today and was wondering if there is any soup i can make that would be acceptable...thanks.

    You can make soup from almost anything!
    I often put leftover cooked veggies and meat into my food processor and make it into a puree (sometimes take some out while it is in larger pieces to add in at the end) then add some cream and heat it up.
    I usually add a lump of butter before serving it with a few slices of microwaved flax bread. Sometimes I cube the bread and fry it in garlic butter to make croutons.

        I make beef vegi every week.Just be sure to use more beef to vegi and make those vegis induction friendly.

          I like to take canned chicken broth (or your own homemade if you have any) and as it's heating up I'll add a small bit of chopped onion, chopped fresh ginger (or just slice it and fish the slices out later) and chopped garlic. While that is simmering I'll prepare my veggies.
          I'll use any combination of celery, broccoli, cauliflower, mushrooms, cabbage...whatever is in the fridge really..all fresh. I'll toss them in with a splash of soy sauce and a few drops of sesame oil and let them cook till tender.
          I'll add in leftover cooked chicken, or I'll poach the chicken seperately, strain the broth, chop the chicken and add them into the soup as well.

            I make soup often. I'll make a big pot of either beef or chicken broth and either just use the stock as soup with the meat cut up or add more veggies. My favourite though is stracciatella (sp?). I beat an egg with a couple of tablespoons of grated parmesan cheese and some freshly ground pepper, then stir it into the simmering broth. That and a salad is a delicous and filling lunch.

              just look at your veggie list and your protein list and let your imagination go wild.

              Chilie soup
              pumpkin soup
              chicken or beef vegie
              cream of brocolli, tomato, or cauliflower
              onion soup without the bread
              roasted pepper or just pepper pot soup
              zuchinni soup
              gumbo without the roux
              ratatoulie with out the noodles and beans

              those are just a few I had on my induction
