So I imagine if you only eat a few Tablespoons as part of your 1-cup vegetables it would be fine.
Soy milk would not be allowed till the Legume rung of OWL
Atkins is a high fat/medium protein/low carb diet so if you don't eat the accepted ratio of 65% fat/30% protein/5% carbs you won't be doing the programme as written so would not have the same results as following the plan would do.
If you can look in the index of your Dr Atkins New Diet Revolution 2002 under 'metabolic advantage' and read the relevant sections of the book it will explain why we need to eat high fat to lose fat.

you will lose weight on any program you do where your cals in are less then the total amount of cals burned from all sources in your body period. Atkins plan is a ketogenic plan and uses a high dietary fat intake to keep the body in the fat burning mode and not switching back and forth with each meal. there are other low carb plans that are low fat of you want to do some research and see if you'd be able to follow them.
