  • I love cooking AGAIN!! How about you?

One thing that I KNOW got me where I didn't want to be (read: high weight) was fast food, running around like a chicken with my head cut off, not planning my meals and not making time to cook! Okay, that's about four things, but...

I've always loved to cook, but being single and cooking for just me was never any fun. So, fast food and carryout joints became extremely convenient and unfortunately a way of life.

With this WOL, I HAVE TO plan my meals, plan my grocery lists (by the way, I LOVE to grocery shop!!) and I'm forced to try new recipes. Well, I guess I'm not forced, but I don't want to get bored. I'm doing Extended Induction because I have so much weight to lose, but I swear I don't understand how folks can get bored. I suppose if you didn't want to cook or experiment.

It continues to amaze me how good the food is with this WOE. I have modified some of the simpest dishes to make them low carb. I would have never thought making Buffalo Wings (low-carb) would excite me so much. LOL. Tonight, I made crab cakes!!! I hope they taste great. I'm taking them to a friend's for dinner tomorrow night. If they are a hit, I'll post my recipe. I adapted it from a recipe in a Patricia Cornwell's novel I'm reading. Go figure! I put it in Fitday and it's a whopping 1 net carb per 1/4 lb. crab cake! Yahoo!

Oh well, I've rattled on enough. I just love all this great food I'm cooking. I've never experimented with so many foods. I love stocking my pantry with all these different spices and ingredients that I need to cook whole unprocessed foods!!

Can you tell I'm excited? Now, all I have to do is get this excited over exercising. Wish me luck!

So, do you hire out as a cook and personal shopper? I could use ya--especially when I'm in school full-time. lol!

I've learned one thing with this WOE, one must learn how to be creative, want to try different things, and enjoy being free from sugars, starches and flours...anything that doesn't fall in line with this WOE.
