    Be careful when looking for recipes, even on the Atkins sight. They list buttermilk as an ingrediant for induction allowable foods.

    I found a recipe (I can't remember where, maybe www.Atkins.com) that called for an alternative to buttermilk. It used Hood Low-Carb Milk spiked with lemon juice. Buttermilk is essentially an acidified version of milk (that's how I view it anyway), I'm not sure of the process. But my recipe called for marinating chicken in buttermilk to tenderize the meat. It was the acid in the buttermilk that did the "trick." I used the alternative and it turned out wonderfully. I can't remember the ratio, I tried to find the recipe but failed. I believe I spiked about 2 cups of Hood Low-Carb Milk w/ approx 1 to 2 tbsp lemon juice.

      Great warning guys. Unfortunately, the atkins site and this site don't agree on what is induction friendly. They use a lot of frankenfoods which we don't agree with. When in doubt about a recipe, come here and these folks will help you.
