Are you tired of the same old thing? I decided to make a new recipe and it's not bad. Here goes:
Slice a medium tomato into 8 slices. Set Aside. Slice 2 Zucchinni long ways into 1/4 inch slices. Saute them in a little olive oil. Don't overcook, keep them firm. Set them aside. Saute a slice of onion diced in the left over oil and brown 1/2 pound ground beef. Add some fajita seasoning and a little (!) tabasco to taste. Get a small casserole dish and spray with Pam. Put half the Zucchinni slices then put half of the tomatoes then half the beef and onions then 1/4 cup of shredded cheese. Repeat. Cover and bake at 350 degrees for 45 minutes. Makes two servings. It's pretty tasty for a simple induction meal and didn't take too long to make....... Everybody share something new!
