  • Anyone Have A Broccoli-Cheese Soup Recipe???

    I've been craving this for a while now, and can't find anything thats low-carb friendly.

    Or ANY good soups for that matter? I've searched the threads and haven't seen anything that caught my eye yet. LOL! Just wondering what everyone else's favorite soup\stew is??? Thanks!

    I have all the cookbooks from Dana Carpenter (they are all low carb). Here is a recipe from her 500 More Low Carb Recipes Book:

    Broccoli Blue Cheese Soup (Or any cheese):

    1c chopped onion
    2tbsp butter
    1 turnip, peeled & diced (optional)
    1 1/2 qts chicken broth
    1lb froz broccoli, thawed
    1c Carb Countdown Dairy Beverage (try reg soymilk instead??)
    1/4 c heavy cream
    1c crumblede blue cheese

    In a large saucepan, saute' the onion in the butter over medium-low heat - don't brown.

    When onion is soft & translucent, add the turnip and chicken broth. Bring to a simmer and let it simmer for 20-30 mins.

    Scoop vegetable out with a slotted spoon and place them in your blender, add a ladel of broth and puree them - return to pot.

    Stir in Carb Countdown, heavy cream and cheese. Simmer for another 5-10 minutes, stirring occasionally and serve.

    Yield: 6 servings each w/243 cals; 17g fat; 14g protein; 9g carbs; 3g fiber; 6g net carbs.

      Here is a super easy peasy one from LowCarbLuxury.com, btw they have a lot of wonderful recipes, you should check them out!

      Broccoli Cheese Soup

      Ingredients:
      • 2 cans chicken broth
      • 2 bags frozen chopped broccoli
      • 3/4 lb American cheese, cut into cubes
      • salt and pepper
      Bring broccoli and broth to boil, simmer 5 minutes, and add American Cheese cubes. Heat on low until cheese melts, add salt and pepper to taste. If soup is too thick, add heavy cream to thin to desired consistency.

      Makes 6 servings. Approx 4 net grams of carbohydrate per serving.

          I make cream of aspargaus soup all the time.

          1 can asparagus.( get the cut kind you are going to puree anyway)
          2 chicken boulion cubes
          1/4 cup of cream
          1/4 cup cheddar cheese.

          I put the entire can juice an all in a small pot, I add the boulion and boil until disolved. I put the whole mess in the blender and puree. I return to stove add the cream and heat until it has reduced a bit(I like thicker soup). I put it in my serving bowl and add the cheese. Salt and pepper to taste. Really easy and very tasty.

          serves 1-2 with 8-4 carbs respectively.

              I do broccoli (and/or cauliflower) soup once in a while and mine is super simple and I vary the ingredient amounts from one batch to another.

              Simmer the veggies in a can or two of chicken broth until they're soft then use an immersion blender to smooth it out. I like to leave it with a bit of texture. Add in some grated cheese and let it melt and a bit of cream to make it even creamier.

                That fontlady site has some nummmy soups.... and I just got Everday Low Carb Recipes from the library. I will look through that.

                My usual broc/cheese soup recipe has been...

                    As I am in the UK and have never seen Velveeta I am not 100% certain but think that Velveeta is a 'processed cheese spread' and as such not an induction-legal cheese.
                    According to Kraft it has 3 grams of sugar per ounce!
                    Wondering how to get 'most' of your net carbs from your induction veggies?

                      Velveeta, although very tasty, is not induction legal. Definitely all processed.

                      Anyway, I am so happy to see this thread!! I am going to be making me some broccoli and cheese soup this weekend. YUM!!!!

                        I grew up eating Velveeta as well, and I was sad to find out it's a no-no...but gee, seriously, the words 'processed cheese food' make me cringe nowadays.

                        I made a FANTASTIC soup one day out of leftovers!

                        but I used chicken instead of pork tenderloin. Either way, this is truly a delicious recipe and I completely recommend it, served with mashed cauliflower, oh goodglaveninagladbag, it's good!!

                        I make extra sauce when I do it up and I had a fairly good serving left over. The next day I took the leftover chicken broth, cooked up a bit of onion and cauliflower(or whatever you have handy) then I pureed it a bit, added some cheddar cheese, and the leftover cubed chicken and remaining sauce and a bit of leftover fresh dill.
                        Oh it was delicious!

                        I command everyone to make this ...lol Just kiddding!
                        Well, no, not really...I do recommend it. It shows a person that Atkins can be delicious and completely not boring!

                        I've found some wonderful recipes off of www.atkins.com but you need to really be aware of your Acceptable Foods list, and be firm in your committment to follow the Rules of Induction as set out in DANDR. Atkins Nutritionals has some funny ideas since the good Doctor passed away, and while the book says not to eat certain things, the website includes these same things in their recipes.
                        I also notice that they have re-done their website and they aren't categorizing what stage recipes are ok for, so again, make sure you have your copy of DANDR handy, so you can make sure the recipe is Induction-friendly.
                        Don't be intimidated by this though....it's good to test your knowledge, and ADBB is always here to help if you need someone to check something out for you.
