  • Board, lunch ideas and more..

I realllllllllllllllllllyyyyyyyyyyyyy need help, I was doing so well. Then boinggggggggggggggggg I bounced off the wagon at Halloween! Well I am back on and I am doing fine, but just board and lost. I feel like I look at food and say "there is nothing I can eat, yek, poooo" When I know darn well there are plenty of foods!!

Now the twist on this, I GOT THE JOB!!! It is with a great company, great benifits, and they offered me a better job than I applied for.. and more money!

So I am thinking lunches now, I am planning ahead. I want to take lunches that are yummy and acceptable and not hard to bring. One lady told me she brought more than she could eat, just incase someone brought a goody she couldnt' have.

I know we have talked about all of this but refresh me on things you keep in your desk and put in your lunch bag. I will be away from home for the first time in years!! Happy and nervous! I need to stay on this diet, I need to not quit!!

Oh and this job has some kind of healthy options program, I don't know too much right now, but excited. Thanks for your support!

Will you have a refrigirator at work? Microwave? Just pack leftovers from the night before. THat's what I do. It's a good way of getting rid of the extra food so that it doesnt start becoming a science experiment in my fridge. Just cook a little extra the night before for you.

Quick stuff: celery w/ranch, hardboiled eggs, peperroni, cheese

I pack leftovers. Last night I had roast chicken. So today, I have chunks of that roast chicken that I'm going to heat up in the microwave with a cup of chicken broth, and toss in sliced green onion, and the "egg soup noodles" (recipe in the "Other" subsection of the Recipe Forums). It's a quick soup, and I'll have leftover broccoli with some cheese melted on top too.

I've gotten into the habit of making Sunday afternoons "cooking time". I make a few induction-appropriate dishes (crustless quiches, bikergoddess pizza, etc.) and divide them up into portion sizes. I wash and cut up veggies, and in 5 containers I make 5 salads. I also get snacks ready and divvied up into snack-size ziploc bags. In other words, I get all my food for the workweek ready on Sunday.

Then, each morning, I whip out my insulated lunch bag and my blue ice block, then fill it with a salad, a slice of quiche or pizza or chicken or whatever, and add a snack or two. Then I'm alllll set for the day!!!

If you need recipes, look at the recipe link above, or consult Linda's Low Carb Recipes: http://users3.ev1.net/~fontlady/

        Hope this helps!!!

        btw...CONGRATS on getting the job!!!

I also take leftovers. I make a lot of my foods on Sunday afternoon and prepackage it in the freezer. I take a lot of salads, eggs, celery/green peppers/pickles/radishes/ and stuff like that. I sometimes take a burger, heat it in microwave and roll it in lettuce to make a burger at work. I pre-cut blocks of cheese into bite-sized nuggets to take a few as a snack. Any left over meat from the night before can be used. I also make soups and take a bowl of soup to work for lunch. (I love soup)

Well, I work from home, but I still have deadlines and such so I make tuna salad a bunch. I take 3 oz tuna, 1 T. dill pickle relish, 1 packet splenda and 1-2 tablespoons mayo. I mix all that up and then put it on a bed of 1 cup salad greens. It is YUMMY!

Another thing that is good hot or cold is chicken salad. I take a chicken breast (usually a left-over that I cooked with Frank's Hot sauce). I dice that up and mix with 1 oz. cheese, 1 c. letture, and either use Ranch dressing or sour cream and it is yummy. You could "beef" it up with some other veggies too. This can be eaten hot or cold.

I know, nothing Earth-shattering from me, but I tried.

If you want to keep something at your desk (no refrigeration) you can buy a little re-freezable ice pack to keep your food cold...or, if you're frugal like me (cheap..yes, I'm CHEAP!!!) then you can just take a swig out of a bottle of water (to give it room) and freeze it and use that instead. Investing in a Thermos lunch bag is a good idea as everything will stay colder even longer.

I really enjoy a 'snacky' type of lunch...raw veggies, leftover meat, a chunk of cheese and a small container of blue cheese or ranch dressing to dip it all in. And I'm a fan of leftovers for lunch as well.

                Moochie,

I do the swig and freeze all the time because you never know if someone you are going to visit will have bottled water or good "tap" water!

Get out your little insulated bag and blue icebrick. Make a BIG salad, and when cooking food the night before cook and extra piece of chicken or whatever. Voila, lunch. I keep a packet of extra tasty cheddar in teh fridge at work, and if I get the 3 oclock hungries a couple of slices and a decaff will quench it until dinner. Once you are off induction take a couple of ounces of nuts of your choice in a little lunchbox, great for the munchies. Carrot and celery sticks are good too.

There is so much food allowe, you'll be fine. Congrats on the job! I'm new in mine, started Atkins and new job on same day in early September (after 15 months unemployment and 10 years FAT!). Good luck.

I love both ideas!! Making all the lunches on Sunday night, and having leftovers from super befor!!

I really love the tuna salid on lettace, that is my new favorite! I also will do water at work all day. I think keeping a snack at my desk will be a good idea! I wonder if I get a desk???? I will have to report back to you, I am so excited!! Yet nervous about this job....

I think I will make it all ahead of time then if we have a good supper then I will just bring that, or mabey just take the two and leave one incase I would forget. We also do have a full service caffateria, yet a person could get into trouble with that unless they would have a few things I could eat.....

Anyway thank you for being here for me!!! Ok one more question, what do you think about keeping those prepackaged sugar free jellos in my desk for emergencies???
