    I know we are allowed 1 cup of artichoke on induction.

    I am a little confused by what to select in Fitday.

    If I select "1 medium globe" then it shows 13.34g total carbs, 6.44g fibre ie 6.90g net carbs
    If I select "1 heart", then it shows 3g total carbs, 1.45g fibre ie 1.55g net carbs.

    I do not understand this.
    I do try and scrape on the base of the artichoke leaves but I do not get much out of his. I only end up eating the heart and the soft bit in the stem. I cannot imagine this to end up as 1 cup of artichoke.

    Am I supposed to boil the artichoke for a long time and be able to eat the leaves and eat only 1 cup of this?
    I do not understand why there are 2 values in Fitday?
    Why are there 2 different net carb values for the 1 artichoke?

    Actually, I'm kind of curious about artichokes as well. I know that you can buy artichoke hearts in a jar, so I'm assuming that's why there are two separate carb counts in Fitday. I've been thinking about buying an artichoke this weekend, and I'm wondering if the one cup means one cup of the leaves (even though a great deal of it is inedible) or one cup of the edible portion. I did a thread search for artichokes, but didn't find an answer to this one!!

      I love artichokes dipped in melted butter! MMMmmm, you guys are making me crave, now Im gonna have to make one for lunch.

      I'm also interested in the carb count, anyone know?

        Seems this should be an instance when the handy dandy food scale is better than cup measurements...

        I fudge it when I have artichoke and count 1 as 1 cup, but to be precise about it, you could measure the artichoke prior to eating, measure what remains after, and use a gram calorie count.

        I guess.

          I'm not sure how they analyse the nutritional counts of a whole artichoke, because the edible portions are the heart and the little bits on the leaves. Anyhow, to be on the safe side I count the whole artichoke as 6 net carbs---let's face it, eating a whole artichoke is work and once you get through eating it, you probably won't eat another unless you have alot of time on your hands lol.

            You could always make yourself eat the whole leaves, and up the fiber count a bit..

                Thanks all for your great replies!!!
                I decided to just scrape the leaves and eat the heart and as Meg says, by the time I finished I wasn't even hungry anymore and I was really low on my daily carbs for the day as it was my dinner!!!!! LOL
                I didn't even attempt eat the leaves - I don't need THAT much fibre to clean out my insides

                I guess I'm leaving artichokes for later on when I have more carbs to play with - I kinda don't fancy using it for a quarter of my daily quota

                  when I eat 1 artichoke, I count it as 1 medium globe. I assume fitday is smart and assumes I am not eating the non edible parts of the leaves, so I count it as 6-7 depending on how big it is. Make sure to count the butter too ( depending on what kind you use). Also, you can pull apart the artichoke before you eat it, and put the bottom parts of the leaves and the heart and stem into a measuring cup and only eat what fits. but I just count it as 6. I dont eat it THAT much....maybe 1x a month if that, so if it's a little more I consider it my splurge

                    Yeah, I've found if you have to work to eat your food, you eat less of it (probably because you're too tired from the work part! lol )

                    Eating a whole artichoke is work because you have to pull off the leaves, until you get to the heart, remove the choke (if it wasn't removed for you before cooking), then eat the heart. By the time you've finished you're too tired to eat another one. Plus it takes time to do it so your stomach has enough time to tell your brain it's nearing capacity.

                    Cracking shelled nuts: same thing, by the time you've spent energy cracking and picking away the shells, you're full.

                    Crab: shelling and picking the crab meat out of a whole crab = work.

                    Shrimp: peeling the shells off steammed shrimp = work

                    Cornish game hens: removing the meat from the bones while you eat = work

                    It's easier to overeat food that has been "prepared" because you can eat it faster and the only work you do is lifting the fork to your mouth.

                      Wondering how to get 'most' of your net carbs from your induction veggies?

                        I buy artichoke hearts in a tin or jar. I just couldn't go to that much work for an artichoke! And, the carb count is on the jar or tin! I'm not at home so I can't check, but I know it's quite low. They are great in stir fired veges and in chicken or vegetable casseroles because they add some bulk.

                          So besides butter does anyone dip in Mayo
                          Also does anyone stuff them I always thought that was a waste of time, I also think triming each leaf of the thorn is a waste of time
                          Does anyone have any good recipes for articoke hearts. I hear there is a dip that is pretty good.

                            Tickletussler, have you considered making artichoke dip, using cucumber slices (or a number of other Induction-friendly foods!) as makeshift "chips"? I love doing this ...

                              I use Mayo! Sometimes I mix the mayo with alittle garlic oil (thinly slice a garlic clove, heat some oil, put the garlic in let it sit off heat.) I trim off the little thorn because I don't like getting stuck when I'm eating.

                              I never understood the stuffing bit myself, but I do like baby artichokes that are essentially braised with garlic and olive oil!

                              I don't like using the canned ones for the hot dips. I prefer the frozen kind. If you add spinach to the dip recipe, you can have it as a side dish for grilled chicken or pork chops.
