  • Pork Rind Alternatives?

    Hi, all.

    I'm looking for an alternative to pork rinds that's low carb. I find that I like them too much and think they're helping me to retain water (too much sodium!) I don't like celery. Any ideas? Thanks.........

    I was just going to say celery! *l* Aren't there low-sodium pork rinds?

    Because Atkins is a diuretic diet, you could just monitor the number you eat and try drinking more water to flush out the salt? I really would kick away the pork rinds and wait until the nut rung and look to macadamias as a viable solution.

    Another option is to nuke pepperoni or try bacon, but both of these are also higher-sodium options.

      Parmesean Flax crackers are good. Or fried Kale. You can make cheese puffs out of little squares of American cheese they're nice and crunchy. I fry shredded cheddar in a nonstick fry pan then let it cool and break it up into nacho chip type things and use them for dips.

      I don't know if you want a substitue for a snack or as a cooking ingredient, I'm assuming snack.
