  • Need help planning healthy snack for a housewarming party

    OK I have really done it now.This post is not at all Atkins related but I know tons of you out there can probably be able to give me some good ideas.I work in a group home for mentally and physically handicaped guys.I have 4 guys I take care of.I thought it would be nice to throw them a house warming party since they moved to a new home.Well i was just going to invite some of the other group homes from the company I work for to the party.Well my boss thought it was such a great idea so he sent the invitation to all of the big shots on the County Board.Now I have to make sure this party is perfect.Now the main thing is that I need ideas for snacks to make for individuals who are on restricted diets.These are the guidelines I need for some menu ideas that kind of go with the diets that most individuals are on.Here goes:

    Some diabetics
    some soft foods due to some not having teeth
    low fat low salt
    I am looking for simple things I can prepare.Maybe some kind of bevarage idea.Heck whatever help or advice yall can give me would be REALLLLLLLLLY appreciated. The simple little party I started ended up being a really big deal and I wanna make a great impression on all that attend.Thank you all for taking the time to read this.You can email me at kramit66@yahoo.com

    Re-Start Date: March 31, 2008

    Starting Weight: 265 lbs. Highest ever!

    Goal Weight: 175 lbs. (as of now)

    Goals:

    1)April 30th- 250 lbs.

    2)June 9th- (My 35th Birthday)225 lbs.

    3)July 29th- (Parents 36th Anniversary)199 lbs.:dancing1

    *To be under 200 lbs for the first time since I was a teen would be the best gift I could give them.

    I often make rollups for finger food.
    Just take slices of meat (I use ham or slices of smoked salmon for preference) and lay a slice of gouda cheese on it and roll it up and chill for a while. Once chilled I take a sharp knife and cut into bitesized portions and arrange them on a large platter - if you lay the pieces out with the cut edges uppermost they look really festive.
    If you dont have a 'flexible' cheese like gouda you can cut a little-finger-sized chunk of cheese to lay in the middle of your roll or spread chream cheese over the meat - especially yummy with smoked salmon!!

    Bacon or ham and brie parcels made with part of a thin omelette as the 'wrapping' are good too. Mix a few diced cucumbers or tomatoes and some shredded lettuce with teh chopped up meat and brie and fold a quarter omelette around the filling.
