  • Making snacks and lunch at work?

    Hi,

    I am really not prepared for atkins today and I am in need of some help. I am at work and all I had here was some shredded cheddar cheese, so I popped some in the micro and ate that for breakfast, but now I have to worry about lunch. I am going to go to the grocery store for that. But what I need help on is what can I get there to make at work that I can be satisfied with. All that we have at work to heat things up with is a small toaster oven and a micro. I like warm lunches.

    I checked the recipes and didn't see anything there.

    All advice and help is appreciated.

    Can you tale a couple of chicken pieces and pop them in the microwave and take some separate salad?

    then you have a little bit of warm foods?

    I have since re-gained a bit of weight, but that is soon to be coming off again!

      That sounds good. Do you mean raw chicken? How will that cook in the micro?

        No I dont mean raw chicken.

        I'm not sure what its like where you live, but here in England we have cooked chicken breasts in our supermarket. I often take a couple of these to work with me.

        Be careful of the ones that have added sugar, btw.

            small can of tuna fish, drained
            cream cheese
            green onion, celery, red pepper--whatever you like in it
            american cheese

            mix it up in a bowl, top with the cheese--TUNA MELT

            It's what I had for breakfast, yummy. Get you some salad to go with it, or other frozen veggies that you can heat in the microwave.

            At our grocery stores here, you can get the celery, pepper, onion mixes already diced up in a small container that you can put back in the fridge.
            Cans of tuna you can keep in your purse, or desk.
            You can even get those packets of mayo--use that instead of the cream cheese (and keep in your purse/desk)
            If you have a fridge at work, boiled eggs, you can heat them up too--deviled eggs, tuna salad, etc.
            Canned chicken, canned salmon.
            At the grocery, you can also get prepared fajita meats--they have some carb counts so watch them closely.

            I wouldn't want to try to buy lunch like this every day--it'd get expensive. So, on the weekend, you can cook up the meats yourself and then take them to work with you...quick reheat and you're good to go.

              Oh those are really good ideas. I think that I will have that tuna melt today. Yummy. Thank you Validrouge.

                I was thinking Rotisserie chicken....my husband has chicken slices for lunch some days. Maybe a pre-mixed salad as well? Tuna or salmon would be good, too.

                  Yeah, that's Valid Rouge, my big baby! She's fullblooded thoroughbred...and lazy, lazy, lazy (like me). Someday I want a draft or draft cross, maybe a belgian or perch. I've been cruising some of the PMU rescue sites...maybe one day.

                  Hey, that can be my goal reward!! WOOWOO.

                  When I go out for lunch at work, I always head to the grocery store. You'll have far more control over your carbs that way. Like Richt, it's always easy to grab rotisserie chicken too.
