we just had a party at my house, and of course I'ms till a little wired, so instead of sleeping, I come to post !
it turned out that all of the food we had was low carb, and it disappeared! not even a crumb!
we had roasted cauliflowers, much like these (I hope you dont mind, barb< i stole your pic!
)

we also had roasted eggplant, and it was a hit:

another one they loved was soooooooo simple. slices of yummy cheese, like mozzarella, topped with a whole leaf of fresh basil, topped with a slice of a very fragrant tomato. just like that, it's soooooooooo good
we also had carpaccio, which is an italian raw fish dish. you pretty much slice some fish thin, arrange it on a platter, top with 1.salt 2.pepper 3.lemon juice 4.olive oil 5.chopped onion. no muss, ready to eat.... if you decide to try this out, a great tip for slicing the fish is to freeze the chunk, and then slice while it's still frozen, that way you dont need a fancy knife.... ah, and you can just keep fish in the freezer for whenever you want!
somebody brought tuna salad, so I got to bring out my porkrinds.
and for dessert i had a bit of the cheesecake I made last week.
they all had something else, and I still think mine was better!
I'm so enjoying being in costa rica. the veggies are cheap! the fresh fish is cheeeeeeap and the fresh basil.......... hmmmmmmmmmmmmm. Im gonna miss it when I go...
on the other hand, splenda is expensive, I brought my own xanthan gum and there's no specialty products..
