  • Scallops recipe needed!!!

    Hello all,

I checked out this web sites recipe link and it didn't have much there and I also checkout out Linda's low carb site for some scallop recipes. I was going to treat myself tonight with some large scallops but I really don't have any good ideas of how to cook them and with what to cook them with. Any ideas?? Anyone else treating themselves tonight with something special??

    Kelly

Not a recipe, but my favorite way to eat them is sauteed in butter.

Sautee in garlic butter, herbs (I use dill) and lemon. Don't use a lot of butter as you want them to brown slightly. Delish. Salt lightly before serving if desired.

I stir fry sea scallops in a small amount of olive oil and butter and remove them from the pan when they are almost done. Then I add veggies (asparagus, red peppers, broccoli, pea pods or whatever you prefer) and add a small amount of minced ginger root and some red hot pepper flakes and stir fry until almost tender. I re-add the scallops, add a teaspoon of butter. Stir again until scallops are completely done. It is very tasty and you can design your own induction friendly spices to please your own palette.
