  • Picnic ideas?

We are taking a bicycle trip/picnic with the extended family this weekend. They'll eat whatever I cook (so they don't have to do anything ) - so that is no worry.

I was wondering - does anyone have any good ideas? I've got to be able to carry it in a small bag on the back of my bike - for like 5 people.

Thanks! I'll plan my shopping around your ideas.

    Re: Picnic ideas?

Is you bike the supply bike or can others help you carry the supplies? If you can organize your packaging, you do marinated vegetables (sauteed veg like bell pepper strips, zucchini sticks, green beans, etc. marinated in an oil-vinegar-herb mixture---the vinegar in the marinade will help to preserve the veggies). Any meats, you should keep on ice.

      Re: Picnic ideas?

We all have a very small place on the back of the bike - and I have a pack. I was hoping for some ideas for finger foods, etc. so I didn't have to pack plates, forks, spoons, etc. I'm sure there are some WAY more creative people than me out here!

      Thanks.

yes... I was going to suggest marinated veggies too... or fried zucchini and eggplant slices, drained on paper then layered, seasoned with salt and a sprinkling of vinegar and large slivers (so you can remove them) of garlic. Yummy if made the day before and left for the flavours to infuse.

Unfortunately, melon isn't on the Induction acceptable foods list. But I suppose you can substitute cucumber....

                        Re: Picnic ideas?

Thanks all! The trip is tomorrow. I hope I can make it. (I'm not a great cyclist...) I've bought the cheese (for cubes), ham and salami slices, made some meatballs, have some olives. The cucumber rolled in ham sounds great. Making some cut up chicken breasts... And I don't know what else to do? Boiled eggs maybe? Need some carbs in there for the LLOONNGG bike ride.

                        Wish me luck!
