Since its getting colder here now, I think I might change my lunchtime salad to a soup!

Does anyone have any induction friendly recipes for me to try?

    many thanks

        Re: Soup recipes

A good way to thicken soups without a starch is to blend part of the veggies.

dont know if this is really good for induction- my own seafood soup-
the pros can review and advise.
6 jumbo shrimp, pealed, deveined with legs attached.
one cup cooking cream ,one cup water, 10 smoked clams with the broth.
          4 oz chunk white fish.
          i large clove minced garlic.
          i teaspoon old bay seasoning.
          quarter cup fresh chopped chives.
          pepper to taste.
          two tablespoons butter.
Melt butter and sautee garlic, pour in cream , water old bay seasoning, mix well until homogenous. add in seafood, gently simmer until seafood is cooked.
add more water if necessary to get personal consistency.
turn off heat, add chives, stirr. top with a few dashes of angostura bitters if desired.
          enjoy.

            Re: Soup recipes

I made a creamy chicken broccoli and cauliflower soup last week that was to die for. Even my hubby liked it and he hates soup!

            5 cups water (approx...didn't measure)
            2 medium chicken breasts
            1 cup cauliflower
            1 cup broccoli
            1 oz. heavy cream
            2 oz. cheddar cheese
seasonings of your choice (I used garlic powder, seasoned salt and pepper)

Boil your chicken in the water with seasonings until water has decreased by about half. Add veggies and let cook until they break apart when stirred (this is what makes your soup super thick and hearty. If you want actual chunks of veggies, add towards the end) When the vegetables have thickened the soup, add the cream and the cheese. Stir until cheese is completely melted.

Should serve two, or one if you're very hungry!

*I didn't write the recipe down when I made it. I can't remember if I added cream cheese or not. I think I did, and if so, I believe it was an ounce.

                    Re: Soup recipes

Buy a roaster chicken and cook it. Take off most of the meat, then make a stock out of the carcass, some water, some seasoning for flavor if you want, even some veggies for flavor. Chill that. Now whenever you want a good soup, spoon out a cup of the stock and add some of the meat, whatever veggies you feel like, and microwave for 4-5 minutes. Delicious.
