    Crepes


    l egg, l/2 pk of splenda, wisk

    spray small skillet with cooking spray, pour egg mixture in pan, don't stir egg, let cook, flip and finish cooking.

    Spread 1/2 tsp. of cream cheese and jam (0 carb made with splenda). roll YUMMY

    or 1/2 tsp. of cream cheese and sprinkle cinimman/splenda mixture, roll,

    You can even make these and put butter and sugar free syrup.

      I am having the same problem with figuring out menus for my honey. She is not a breakfast person, unless it is something like a roll and maybe some tea. She is starting on Atkins (though she really wanted to do Weight Watchers, much to my chagrin), and I told her that if she would at least give it a shot, that I would plan everything out for her. Is that love, or what?

      She does not do eggs, which I could eat all the time! What I have been trying to do is to get her balanced protein, fat, and low carb breakfast. She will drink the Atkins RTD Shakes, but that will not give her enough protein or calories IMHO. Therefore, I need to mix in some breakfast meats, such as bacon, canadian bacon, and pork sausage, as well as getting some of her veggies in for breakfast, but can't think of anything but tomatoes. Also, I was thinking of the muffin in a minute (made with flax seed meal), which has egg in it (which is OK with her) and then add some cream cheese to it.

      I loved hearing everybody's ideas. I think this will help me get some additional needed variety for her.

        Hello,

        I usually will have cheese hotdogs, shrimp, chicken or tuna salad, roast beef cut into chunks and then dipped into mayo/horseradish mixture, meatballs, deviled eggs, celery w/ cream cheese, ect....

        Eat whatever you feel like, if you want to have a steak and Lobster dinner with butter in the morning, go for it.
