Don't get too worried about the intricacies of OWL... it's simpler than it might seem at first, and you get into it quite soon.
Introduce your new foods slowly and be aware of your body's reaction... if there is a reaction.
You have quite a bit of weight to lose, so it would certainly be in your best interest to take it slowly. Adding something extra every so often gets to seem like a reward/treat... and if you've no probs then you get to eat that new food from then on in, if you want to.
I'd agree with Julie that it's probably better not to raise your carb level too fast. You've plenty of time. Enjoy the experience.
Remember, that many have trouble "catching on" to OWL in the beginning. I'm sure there are plenty of people out there who didn't do OWL in the absolute "perfect" way, yet got to goal all the same... which isn't to say one should be haphazard about it...just that it's human to make mistakes! I certainly made a few along my journey.
