  • What about Artichokes

    Artichokes are listed in the acceptable food section for Induction, but they have about 17 net carbs for a medium sized one. Can you really eat them? It would take most of your carbs for the day!

    page 126 of DANDR tells us we can have 1 cup of artichoke hearts if the salad veggies do not exceed 2 cups.

      WHERE ON EARTH did you read that net carb statement??!?? (I'll bet you were looking at Jerusalem Artichoke, which is a tuber)


      try about 3-6 depending on weight, not 17 for your average artichoke (whole, not heart only)!

        I've always questioned how the figure out the carbs for a whole artichoke because the edible portions of a whole artichoke are the heart and the little bits of tender flesh at the base of the leaves.

        I have a tendency to believe the nutritional info in this link, because it specifically addresses the edible portion of a whole artichoke, rather than the entire artichoke, non-edible portions included in the analysis.

          That is a toughie- but it still doesn't make much difference. If you're ravenous and/or in the quest for more dietary fiber and decide to eat more of the leaves, you mainly get more fiber. Most of the net carbs are in the heart and leaf bases (the soft part).

            I don't know how much of the tough leaves you can eat...unless you're eating baby artichokes or the larger ones that are deep fried in olive oil (yum!!!!)

              You can eat the whole thing, but the little thorns at the leaf tips (all the way in) are best avoided...they're a bit tough to swallow! It's called roughage....

                Hmm, well I got the info from the Atkins website, it says:

                  Not2late, that's a great link. Most sites do not specify whether the count is for the entire head or just the edible parts. I love artichokes... I had a chicken/artichoke heart skillet dinner last night. One of my faves!

                    Thanks for posting that link Megs... I was always a little dithery over artichokes, but love them so much! Here we cook the hearts only with wild mint.... deeeeeeeelish!
