    I'm so proud!!!

    Hi everyone and Happy Easter!!
    Went to my sisters for Easter supper tonight. I was asked to bring the squash dish. So I made it and the only ingredient that wasn't allowed on induction was the brown sugar...so guess what???...i used splenda and it was exactly the same So I sat down on fitday before leaving and figured I could have 1/2 cup of it with my turkey.
    There was dressing...mashed potatoes...broccoli in some sort of sauce (not allowed) carrots...and berries with ice cream for desert...

    I was not tempted AT all...that's so amazing to me. I had 1 cup of turkey with my 1/2 cup squash and that was it. I was full and satisfied.

    This morning I walked for an hour with my dog and burned 533 calories ( I wear a heart monitor that tells me all that). Now I'm thinking of going on my eliptical however I don't want to overdo it so I'll just wait till the morning.

    Anyway...I just had to share as I'm so proud to have gotten through such a supper without going off my program. I LOVE this WOL!!!! Oh and yes...I had my sister take a full length pic of me to post here instead of the one with her and I. Can't wait for her to send it.

    WOO HOOO Great Job.. I fixed a broccoli salad and added Splenda too and the family didn't notice...They loved it. I did great too today

                      Here's my recipe...however...I didn't measure the ingredients but this will give you an idea:

                      I bought 3 small butternut squash
                      Microwave for 5 minutes to soften the skin
                      Then cut in halves. Leave seeds as they are easier to remove when cooked.
                      Put them in a pan cut side down and bake them at 350 for 1 hour.
                      You can also cook them in your microwave until the inside is soft but I prefer the oven.
                      Remove them and scoop out the squash and put in bowl
                      Add two eggs
                      Add 1/2 cup butter
                      Add 1/2 cup 35% cream
                      Add 7 packets of splenda
                      Mix with mixer until nice and creamy.
                      You can add more cream if not creamy enough.
                      Pour into a non stick dish and bake at 350 for 30 minutes.
                      Voila!! It was a hit last night even though I replaced the brown sugar with the splenda
                      Enjoy!!!
