  • Favorite Induction Friendly Snack

Do you guys try to supplement your 3 meals with small snacks? I'm wondering if that will help me with the stall. If so, what do you eat? I already get plenty of veggies from my lunch salad and usually have my 3rd cup with dinner. I get plenty of cheese from on my salad and dinner most of the time (like faux loaded potatoes). So what else might be good?

My husband was watching this program on cheesecakes on the FoodNetwork (evil!), and I went out to the kitchen and made a "mock danish."

      1 egg
      2 oz cream cheese
      1 packet of splenda
      little vanilla

The recipe I found also called for some lemon concentrate but I left it out. You just soften the cream cheese, mix in the egg/splenda, and then microwave for 2 minutes.

For me, at that moment in time, it really hit the spot.

Other than that, my favorite snack is 1 oz cream cheese wrapped with some roast beef (I found nitrate/ite-free and it's wooooonderful).

For a quick snack I like to just take a baggie of pepperoni with me. Sometimes I will put the pepperoni on a cookie sheet and bake them about 10 mins or so, then let them cool and they are crunchy like chips. You can eat them by themselves or dip them in an atkins friendly dip.
I also like to make a stuffed celery stick. The filling is mayo, parm cheese, chedder cheese, and bacon bits. I don't really measure just stir and taste. Stuff them in celery stalks and refrigerate. Really good!

I like veggies and dip, or grilled chicken tenders and ranch dressing. The pepperoni crisps are awesome, as are the cheese crisps. I'm a fan of the chocolate mousse and the mock danish, too. Hrmm...Ooh I also LOVE LOVE LOVE sliced bell peppers (not green, but red, yellow, or orange) and homemade beef jerky. Olives are a great treat too!

I use cheese strings or meatballs. Wal-Mart sells a bag of crockpot meatballs that has 5G carbs for the entire bag. I will make these on the weekends and throw some in a ziplock back and put them in the freezer. Then when I want a snack and take them out and microwave them. They cost under $5. Not bad for a snack that should last at least a week.

Great ideas! I bought pepperoni and will be getting some meatballs at Walmart this weekend. (Love mock danish's too!)

                  Thanks!

Miss Phode: I second that. I have to be reallly realllllllly careful about my cheese allowance or I could use it up in 1 meal.

Do you know what the brand name is, and bag size on the meatballs you are refering to? I would love to get some!

Me too. I always weigh it first before eating it. I easily overindulge in cheese. It's my weakness.

Blah! I checked all the meatballs I could find at Walmart, and the best I could find had like 6gc per serving. I would love some meatballs, but would much rather buy a bag if I could.
