  • Salad carb question

    I am sure there is a simple explanation for this or maybe it's a senior moment...
    On Induction, you are supposed to eat no more than 20 carbs. DANDR states: two cups of salad and 1 cup of vegs.
    But if salad greens are only 3 carbs for 2 cups and a cup of cauliflower is 6, is it safe to eat a LOT more salad greens to get you to 20? I know the 20 carb limit is for a combination of things, but if no other carbs were consumed at all, is my example correct?

    We're not supposed to go over the three cups on induction because that's where we need to learn portion control, Buddyjay. Try to throw something in there from the "other" list like pumpkin or squash that's higher carb.

      Also remember that everything you eat has some sort of carb count. Eggs, Cheeses, etc.

        There are lots more veggies on the "salad" list besides lettuce. Lettuce has very little nutritional value.

        Eat your two cups worth of "salad" veggies in veggies that have some SUBSTANCE to them.

        Sweet peppers--green, yellow, red. Red peppers have more vitamin C per serving than oranges do.
        Jicama--It's got a relatively "high" carb count compared to the other "salad" veggies, but its about 50% fiber. Much needed in our diet. It is a VERY yummy snack.

          Thanks, thats where I was making my mistake. I put it in my mind that "2 cups of 'salad' vegs'" where in fact S A L A D (read lettuce). I figured that it was probably a "mental" moment.
