You can have Piggy Rind Pancakes on induction, if you don't eat them all in one setting. I make three meals out of one batch. They are very filling and delicious. I put DaVinci's sf syrup on them or Maple Grove Farms sf syrup sweetened with Splenda. 1/4 cup of the Maple Grove stuff has 25 calories and 7 carbs and zero sugar. I never use but a little bit, because it goes a long way on these pancakes.
Piggy Rind Pancakes
1½ ounce pork rinds
2 eggs
¼ cup heavy whipping cream
½ teaspoon Cinnamon
½ teaspoon Vanilla
Measure out pork rinds and crush them to resemble bread crumbs. Set aside.
Beat eggs well. Add cream, cinnamon and vanilla and mix well. Add pork rinds to egg mixture. Pat down with a fork to get them into the liquid and let sit for about 5 minutes to absorb the egg. Heat oil or butter in a skillet; pour and spread mixture over the bottom and cook until golden on each side. Top with butter and low carb syrup. Good warmed over.
