    Here's a recipe if you are in the mood for Mexican:

    2 Tablespoons Olive Oil
    1/2 cup chopped green onion
    3/4 - 1 pound pork, chicken, or steak cut into 1/4 inch pieces
    2 cups diced peppers (red, yellow, green)
    1 teaspoon minced garlic, or 1/4 teaspoon garlic powder
    salt and pepper
    1 cup sliced fresh mushrooms
    1 teaspoon cumin
    1 teaspoon chili powder
    1/2 teaspoon ground dried chipotle pepper (optional)
    Shredded Cheddar cheese
    sour cream

    Heat oil in large skillet over med-high heat. Add green onions, cook and stir 2 minutes. Add meat, cook and stir 5 min. Add bell peppers and garlic, cook 5 min.
    Season mixture in skillet with salt and pepper. Add mushrooms, cumin, chili powder, and, if using, chipotle pepper. Cook and stir 10 - 15 minutes.
    Top with cheese and sour cream.

    Makes 4 servings. 6 net carbs per serving. :eating :yummy
