Holland and Barratt sell Linseed, as do Julian Graves (Bristol based so may not be in Scotland) and most health food shops. You can get the dark stuff and the more expensive Golden Linseed.
I have not seen it ready ground, but no problem, a coffee grinder is cheap enough and they say its better to grind it as you need it.
I have only recently taken to Flax Muffins. I find the US recepies very sweet. In a batch (if I want them sweet) I add one teaspoon of liquid Hermesitas - the only liquid sweetener available in UK - it has no carb overhead as do the granular sweeteners.
But I often make a batter with linseed and oil or butter and eggs and add a little salt. As you add more protein powder to the mix it becomes more like bread and less like Muffin.

Liquid Hermesetas in not available at Boots - you have to go to an independent chemist and ask for it to be ordered - just takes a few days. Liquid Hermesetas will stand the heat of baking.
