I'm lazy tonight so I am making a mixed green salad with chopped up turkey sausage, parmesan and ranch dressing...I also like to make chicken thighs and put spinach sauteed with mushrooms, garlic and heavy cream on top

Wow!! Look at you, you little hottie!! I can't wait till I get a waistline like that!!

I like to switch up my foods a lot because I get bored easily.
Linda's Low Carb site has really great recipes, and what makes this site special is that she makes them and gives her own suggestions. Our current fave is the hamburger green bean casserole. I've done it with the green beans and with frozen broccoli as well.

Another meal we really enjoy is pork chops marinated all day in a bit of soy sauce, chopped fresh garlic and ginger and a splash of lemon juice. Bake that up...mmm..really good with a salad....and it's great the next day sliced up on salad for lunch.

Up in the recipes tab if you look on page 3 of the Beef recipes you'll find one for "Hamburger Pie"...thats a good one too. I use that idea (of making 'crusts' out of hamburger) and put my own fillings in. One time I filled it with peppers, mushrooms and mozza, so it was a pizza pie.

Take a look down in the recipes forums for some great ideas too! :eating

Tonight I had leftovers -- the last of the Italian Sausage and Kielbasa stir fry (sausage, onions, peppers with Durkee's 6 Pepper Blend to spice it up) and turkey fajita meat. I agree with Moochie about Linda's Low Carb site -- it has inspired many new Atkins creations. BTW, your "after" photos are great; it would be a shame to turn back now.

I cubed skinless chicken breasts and pan-fried it in olive oil with some garlic and herb seasonings. I had a serving of that with some string beans with bacon crumbled on top. Nothing too wild tonight.

If you need some inspiration, the recipes section on this board has some great ideas worth trying! Hang in there though, you look wonderful! :ThumbsUp

Mine is kinda similar to sofresh's...I marinate (or just soak if you don't have the time) chicken breast in italian dressing (they now have a 0 g carb one on the market) with some garlic and it's sooo good. I also like porkchops coated with garlic and some coleslaw as a side dish.

I ended up making something different tonight and it was really easy...I sauteed some spinach and garlic in olive oil and added some chopped up turkey sausage and a sprinkle of parmesan...it was so dang good I can't wait to make it again tomorrow.
