  • Is there a way to make "breaded" chicken

    thats induction friendly? I'm SO sick of plain ole chicken breasts

    Tammy, I just used pork rinds, you know the kind that come in bags like potato chips, and crushed them and make some killer pork tenderloin schnitzels. They have 0 carbs in them, and of course the pork is 0 carbs too. Man they were awesome. I used the barbeque flavour and just sprinkled garlic on the meat, dipped the meat into beaten eggs then dipped them into the pork crumbs. Pan fried them in veggie oil and I was in heaven! They so tasted great that my hubby was even surprised that I was eating them because they tasted like the real thing with breading.

        for the superbowl.. i used chicken cutlets and then dipped them in an egg and some cream and then into parmesan cheese and baked them.. they came out sooo good

          you can bread them in and hard grated cheese and back them mix some spices in and changee the flavors.
          you can use flax seed meal too if you are using it as your fiber supplement

          you can load the chkine under the skin with herbs and spices too. you can coat the outside with hotwing sauce and "buffalo" you chicken.

          you can roll your chicken up with pureed veggies insise and brown in flavored butters

          I love to "stuff" them with spinach and cheese and then cook in rosemary or garil oil

          Just count all your carbs and remember stop eating as soon as your hunger is satisfied even if you still got food on the plate so you don't over eat your Atkins.

            Any bbq flavoured pork rinds I've seen have sugar in them, so read the ingredients, folks!

                Thanks everyone....I think I"m going to take Paus advice..that way HUBBY can do the grilling and it won't make a big ole kitchen mess!! :nod

                  I cook them in microwave+grill and not the oven. The result is better.

                    If you can find soy protein isolate (Carbsense Zero Carb Baking Mix), it does a fine job and it does not add the saltiness of parmesan cheese can. My standard is 50-50 parmesan and this zero carb baking mix, egg-wash, and then back in the original mix. It's as close to extra crispy chicken that I can get. Highly recommended.
