  • Spaghetti Squash

    Soo a while ago I bought a Spaghetti Squash and I never used it...

    Tonight I decided I need to at least TRY it, so I did! Let me tell you WOW this stuff is actually VERY tasty when just baked with some salt/pepper/evoo.
    I ended up making a spaghetti out of it and it didnt turn out bad at ALL! I have been needing to add more veggies and I think this may be part of the way to do it. The only problem I ran into is not being able to find any really low carb sauce so I settled with 5g net carb sauce per half cup.

    I'm starting to get tired of the same ole meals and this pushed me to try something new and that was a SUCCESS!

    It was suggested to me that I might move on to OWL but I still have 171.2LBS to my goal weight of 170. Should I make the leap and see how it goes? My losses are actually slowing down quite a bit but the scale is still moving. I did just start weight training too so that should have something to do with it.

    Hello Robert,
    I too love speghetti squash. I make parmesian meatballs w/ ground beef or turkey, pamesian cheese, egg, fresh oregano, and garlic. I buy organic Fire roasted tomatoes and pour over the cooked meatballs and throw in fresh button mushrooms with some slice leeks. I let that simmer for about an hour as the speghetti squash bakes in the oven. All getting done at the same time an hour later. Pour meatballs and sauce over speghetti squash. And there you have it, Speghetti and meatballs. Sprinkle little parmesian cheese on top for garnish. Enjoy!
    Congrats on the lost pounds forever! Absolutely! Move onto OWL, Rung 1 Veggies. It's time to see what you're body is tollerable or intollerable to. You can stay anywhere from 2-4 weeks, or longer, on each rung depending on how many different foods you will be allowing back in at that rung. You can't go wrong with adding 5 grams of veggies back in on top of your already 20 grams of carbs a day. I say, GO FOR IT! You'll be amazed at how the pounds just keep melting away.

      I absolutely cannot wait until summer so I can enjoy fresh veggies and fresh herbs once again!! I freakin miss the farmers market every saturday morning!....

      So I need to read the OWL part of the book now.. or at least re-read it now that im used to the diet more. I'll be happy when I can move onto the alcohol rung! I love to drink wine (mainly just tasting!).

      I need to start worrying about how much weight I lose now because now that im lifting weights its going "the wrong way" LOL. Any tips on that? Like will I keep gaining weight even though its muscle or will I get to a point where I wont gain any muscle then the weight will go down but I will be left with muscle....

      Or maybe I just think way too much!!!

        My favorite sauce for the squash is posted somewhere but..

        1/2 cup heavy cream
        1 tbsp butter
        1 tbsp minced garlic
        1/4 cup shredded cheese (parmesean or cheddar)

        Works out to about 2 servings at 3 carbs each. Or close to. I'm all fuzzy from my allergy pills, lol.

        Also just simmering some minced garlic, salt, pepper and butter together and topping it with that is also yummy!

          Does anyone have the carb info for spaghetti squash? I went to nutritiondata.com to look it up, and it showed that 1 cup has 10g carbs. I hope this is just wrong.

            According to FitDAy - which is what I use I cup of spaghetti squash has about 8 net carb (10 carb and 2 fiber).

            I like it with some homemade tomato sauce and some cheese.

            I think if you work out with weights you really should think of going to OWL Robert and get a bit more carbs daily. It would help with the bored - food problems too.

              Mmmm I'm eating spaghetti squash with alfredo sauce as I'm typing this...soo good.

              Lasst10: It does have quite a few carbs for a veggie...however, most of our carbs on induction are supposed to come from veggies so it can work. For me, I didn't start adding it in until OWL Rung 1, because unless you eat it with a butter sauce, the carbs do add up quickly.

              Robert: I lift weights about 3 days a week. I did this before I started Atkins, so it's difficult for me to say how this has affected my weight loss. I'd rather have the changes I see in my body than a loss on the scale any day (I love my hamstrings these days!). I've heard theories that when you change your exercise routine, your body hangs onto water more, so that might contribute to the scale gains. Theoretically, gaining muscle mass should boost your metabolism, so I'd keep it up. Personally, I'd rather have visible changes in my body than a loss on the scale that no one sees but me anyday.
