  • Cooking ahead and my spouses reaction to Atkins

    I have never been an enthusiastic cook. Oh, I love to eat, but cooking is not my thang. There have been many times in my life that I did not feel like cooking and did the fast food instead. So I have to say that doing Atkins has really helped me make some positive changes for me in the kitchen.

    For one thing, I cook ahead, which is something I have never done before. I have a George Foreman grill and when I cook some meat, I cook all of it at one time then package singles for later. That way if I come home ravenous, I have good food choices I can access immediately.

    Before I would have picked, picked, picked, while waiting for food to cook. I am learning to keep boiled eggs in the fridge. I am cutting up snack vegetables and packing them to take with me when I go out. Really I'm amazed at myself.

    The reaction of my indonesian spouse is amusing. Djoko is very skinny, curse him, and he eats carbs all day long. of course rice is a daily staple, and he loves bread, and french fries are his favorite food. He is living proof that our bodies react differently to the same stimuli.

    Djoko does not believe that I am on a "real" diet and is very suspicious of Atkins. he thinks the way that I am eating is just crazy. he thinks that I need to eat more rice. i think his feelings are somewhat hurt about the rice, because I used to eat alot of it with him but now I can't. I will eating something on my plan like a pork chop, and he accuses me of cheating. it is funny. lol...

    Djoko has never had a weight problem and he doesn't understand my issues. He keeps commenting that I don't seem to be losing weight.
    He is expecting a major change in a short amount of time which is not what I am after. I am after a permanent change. And for me, it isn't just about the weight, it is about my health, and it is about my freedom from the carb addiction.

    It is interesting to observe how a naturally thin person eats. He eats about 6 - 8 meals a day, but small portions. he wakes up after about 4 hours of sleep and needs a snack. He is always very hungry but gets full fast. He can eat 2 bags of french fries and it makes no change in his weight at all. He is always craving fruit.

    I love Atkins. This way we can both have want we want to eat.

    Good for you and your readiness! I live alone, but I buy family packs of meats and fish and cook at least 4 servings, so I have some leftovers to eat (saves me from cooking another meal too)

    From the description you give of your husband, it sounds like he suffers from reactive hypoglycemia.

      I hate to sound morbid but I know plenty of "skinny" people that now, in their late fifties, have a real problem with cholesterol, my father included. I am, in a way, glad that I have "fat" issues because now I can do my best to ensure that I don't have other problems later on.

      I fear for my "skinny" friends who eat what they like, when they like. I used to envy them but I have since changed my mind.

        I believe in cooking once but eating two or three meals for the effort. It's just so much easier and planning is key for me.

          Me too!

          Tonight we had Hamburger/Cheese pie and all I had to do was reheat it in the microwave and do some quick veggies as when I made it last weekend I split the recipe in two and made two pies. We ate one and I froze the other one and took it out to defrost today.
