  • Mini Cheesecake recipe

    I originally posted this in the recipe forum but it seems like no one ever reads those (there's too many forums on this message board in my opinion), but maybe someone here can help me out?

    I am trying to find a recipe for a really small cheesecake. I am only making it for myself, and I don't want to have a whole cheesecake sitting at home (recipe for disaster). More like a single serving of cheesecake. I bought those mini torte pie tins from the store, and am hoping to make it in there...can anyone help?? Thanks!

    This is a great site for Atkins Recipes: http://www.genaw.com/lowcarb/index.html. I use it religiously to keep things exciting and different. The (*) indicates that it's okay for the Induction Phase, so on the cheesecake omit the toppings and you're good if you're still on Induction . Click on RECIPES and then DESSERTS.

      You ought to be able to halve or quarter the ingredients to make a smaller cheesecake or if it is freezeable make several small ones from the original recipe and freeze some for later use.

      Or if it is not freezeable make several and take them to work or to a neighbour's house. I am sure they wont go to waste - my lowcarb desserts always get rave reviews from non-LCers!

        Scroll down to Valid's post, they are mini cheesecake muffins, and they are so delishious!!! You make them in a cupcake pan though, so you get 12 little treats!!

          I always freeze my extra portions. Trouble is... I then forget they're in the freezer!
