  • Veggie Suggestions

    I'm getting tired of salads for lunch. What are other ways to have veggies with lunch? I have to brown bag it everyday but do have a refrigerator & freezer to put things in at work.

    What do you usually use as salad veggies? There are loads listed in DANDR including peppers, celery, mushrooms, radishes.
    Wondering how to get 'most' of your net carbs from your induction veggies?

      I don't think it's the ingredients, it's just the thought of a salad that is starting to gag me... I think I've overdone the whole salad thing. I'll try different veggies though and maybe different dressing too.

        Maybe make some crustless quiches that are heavy on the vegetables? they could be reheated at work if you prefer a hot meal/snack.

          Maybe some dip - for a variety. Soup? (I love soup)

            I had too many peppers, both red & green, and mushrooms, on hand and since I decided to do induction I knew I couldn't eat them all before they went bad. So I cut everything up and roasted it all in the oven with lots of olive and some whole cloves of garlic, until soft but not mushy.

            For lunch today I chopped up enough of that for my veggie serving, added a few sliced olives and chopped capers and some fried chorizo sausage plus one ounce crumbled feta cheese. This is good either hot or cold. Sort of Spanish.

              Hi there
              Have you tried the Mockafoni recipe from Linda's low carb site?

              It calls for frozen cauliflower, which I used the first time I made it, but I don't see the advantage of that over fresh, and fresh tastes better, so I use fresh now. It's awesome!

              Lot's of veggie ideas there.

              myself, I take a few celery sticks, a few cherry tomatoes, some sugar snap peas, some mini cukes, jicama, some cut up cheese and a boiled egg for my lunch at work. Sometimes I throw in some pepperoni too. I like to snack on little bites here and there, so it works for me. I don't use any dip, but that might be nice too.

              Or, I chop up a bunch of lettuce and sugar snap peas and mix in a can of tuna and some mayo.

              I don't know if this would reheat well, but zucchini is also really good sliced, dipped in egg and then parmesan cheese and fried! Yum!

                Do you like broccolli? I know they sell that now in the individual servings, that you can just pop into the microwave. I know the carb count on that isnt too bad.

                    Here's another different kind of salad (if you're at the nuts!):

                    1. Steam some broccoli
                    2. Toast some pine nuts until golden in a dry pan (watch carefully so they don't burn).
                    3. Remove the nuts, add some sesame oil and some diced red peppers and saute until not quite soft.
                    4. Add the pine nuts back to the pan to heat briefly, add some fresh lemon juice or rice wine vinegar & pour over the broccoli. Add some salt.

                    I used to do this with sesame seeds, too. Yummy hot or cold.

                      I used to hate vegs and now I find them sweet tasting and so yummy. Here is myone of my fav.

                      Oven roasted veg- whole garlic cloves, onions, portebello mushrooms( marinate mushrooms in EVOO & red wine Vin. for like 10 min), zucchini, yellow squash, red & orange peppers, eggplant, asparagus- sprikle with onlive oil, some coarse sea salt, fresh cracked pepper, little garlic powder. Oven roast them in a lipped cookie sheet and spread over the entire pan. Cook @ 400* for 20-30 minutes or until oven roasted enough for your liking. * make sure there are not too many in the pan or they will only steam themselves, not roast. If too many do it up in 2 batches.
