  • Wedding Anniversary

    It's our 2nd wedding anniversary this Saturday. Usually we would have gone to Pizza Express or an upmarket restaurant but this year my husband has kindly agreed to eat a low carb meal which I will cook. I'm really proud of him actually, because he smiled and said "sure, I can do without carbs for one meal". He's lost a load of weight by doing his own diet thing and I know he enjoys his carbs at the weekend so he is really doing me a favour.

    Anyway, I was wondering if you guys have any ideas for a three course romantic meal. I would really like to make a dessert as he has a sweet tooth and it would feel like a proper meal we would have had, had we gone out. I know he's partial to cheesecake but I'm not sure all the ingredients are available in the UK.

    Any help would be really appreciated. I shall also be looking through the recipes section but it would be nice to know what you guys have found to be really tasty.

    My hubby loves greek salad, shrimp scampi and my own induction friendly cheesecake, made with regular cream cheese, splenda, and heavy cream that I found in a low-carb magazine.

      Ooohh, how do you make the base to the cheesecake, in fact, do you have the entire recipe?

        Here's the recipe:

        12 oz softened cream cheese
        3 packets splenda
        1 tsp. vanilla
        1 c. heavy cream

        Combine first three in bowl. Whip cream then fold into the cheese mixture. I chill in a pie pan and enjoy!

          Don't know what my bloke would think about there being no base, but then I couldn't see how a base in any form would be induction friendly

              appetizer??

              I have a great appetizer for you (even though I most of the time make a meal out of it).


              4 chicken breasts
              1 eggs
              1/2 cup heavy cream
              2-3 cups bbq pork rines

              in a small bowl mix together the egg and the cream (set aside)
              crunch up the bbq pork rines (set aside)
              cut the chicken breasts into about 1.5 inch cubes
              role the chicken in the egg/cream mixture
              then role in the bbq pork rines

              bake at 400 degrees for about 20-30 mins. YUMMY Hope you enjoy

                Never tried it but maybe combining melted butter with somthing like crushed flax crackers made with splenda added might make a sweet crust?
                I know the cheesecake mixes have crushed digestive biscuits mixed with butter for their bases.
                (Btw for any USA readers - English cheesecakes often have a crunchy base)

                  check out the recipe area. there is one for suffed mushroom caps that i made a few weeks ago. it was soooooooooo good. dont forget, you have to use real crab meat because the fake is a no no.

                    hther, sounds yummy and I have all the time in the world to cook our dinner. Do you completely grind the pork rinds to a powder or just smash them with a rolling pin?

                    Elizellen, excellent idea. Now where do I buy flax crackers? Would I be able to buy them from Waitrose or Tesco or are they more of a health food shop purchase?

                    pluorvee, stuffed mushrooms would make a great starter to preceed the chicken. My bloke doesn't like crab so unless I don't tell him (I've done this before and he's LOVED something he "hates"), I will have to go with a bit of mozarella, garlic and herbs or something.

                    I think I have my menu sorted. I just need to buy the stuff and hope all goes to plan. Mwuahahaha! mwuha *cough* mwuhahaha *splutter* :geek

                      I dont know if anyone makes them commercially and sells them but they are very simple to make yourself.

                      Just mix equal amounts of water and ground flax [linseed in UK] (say 2 Tablespoons of each) and leave till the flax absorbs the water.
                      then spoon dollops of the mixture onto parchment paper and spread it to about 1/8"/3mm thickness with the back of the spoon.
                      Then microwave on high a minute at a time (check each minute) till they have gone hard.

                      These store quite well in an airtight container. I make them each evening for my DH's breakfast of crackers and philly!

                      I imagine if you add some sweetener to the water they would turn out ok to be crushed for a cheesecake crust.

                      BTW - I am a bit 'economical' and found that I can peel them off and re-use the parchment paper several times!

                        I've never dabbled with Linseed. I just looked it up on Tesco's site and they do Golden Linseed, 500g for £5.49. What's strange is the Carb percentage is 5g/100g yet the fibre 16g :confused There's also 40g of fat, where does that come from?!

                        Either way, if this is the right one to buy then I shall be giving it a shot

                          just smash them up enough to give your chicken a "crunch", a rolling pin wound be good. just dont get them to powder-ee

                            Remember in UK they list the fibre carbs seperately so the carbs they list are the NET carbs.
                            The fat is a natural part of the linseeds which contain lots of good stuff.

                            BTW the price seems a bit high - I pay £1.99 for 500 g of golden linseeds from an ordinary health food shop.

                              Glad you told me that!

                              One more question (I promise), how long do you need to soak the linseed for? I want to make the cheesecake tomorrow night so that it is ready for the following day. I just want to make sure that it's an instant thing, otherwise I'll need to go and soak it now, or in the morning.
