    Just wanted to give a big YEAH to cauliflower!!! We are going to a picnic tomorrow. So I thought I'd take ym grandmother's potatoe salad, Which is so yummy and doesn't have any sugars or starches in it except for the potato. So I made it the same excpet instead of boiled potato I used steamed cauliflower - it was to die for yummy. A ctually I think I like the texture even better that potato! My DH said I'm "embaressing" him my bringing something a veggie "fake out" I tol him to shove it! and that I wasn't going to fake it - I'm just going to call it cauliflower salad and start a new trend! HA

    Anyways, it was VERY yummy and my kids loved it too!

    Bah! What does he know?

    I make the cauliflower casserole that is like the hash brown casserole every time we have to take a dish somewhere and EVERYONE loves it and everyone asks me for the recipe.

    My husband is very proud. And he could eat his weight in that low carb cauliflower casserole....

      yummy - that sounds good. Is that recipe already posted here soemwhere..or is it your own creation ?

        Thank you, both!! That sounds so good. I always forget about using Cauliflower as a potato sub. Also, good job planning ahead for the picnic.
        Try to get 80-100 ounces a day!

          I just nuke the bag of frozen cauliflower to get it soft. Then I add a container of sour cream, a block of cream cheese, and a cup of shredded cheese. Combine with cauliflower and top with small bag of crushed pork rinds and cup of melted butter. Bake for 45 minutes??? at 350...

          There are so many variations to this. Add bacon and sauteed onions. Season with garlic, salt, pepper, green peppers, sliced jalalpenos. Different kinds of cheeses.

          Last time I made it, I took it to dinner on the grounds at church. It was the first dish that was gone and everyone wanted the recipe.

              My family would be disappointed after four plus years if I didn't serve cauliflower in lieu of rice, potatoes, etc..

                Cauliflower is awesome...If egg is the perfect food for Atkins, then cauliflower is the perfect veggie.

                I nuked a bag of frozen tonight and then sauteed it until brown in olive oil. I could've eaten ALL of it.

                  Kelly, is that cauliflower casserole 16 oz bag of cauliflower, 8 oz container of sour cream and 3 or 8 oz cream cheese? It sounds sooooooo good.

                    Great Cauli recipies

                    Like Erika I never call my cauliflower dishes 'faux taters' etc, as they dont really taste like the spud originals.

                    But my DH genuinely doesn't miss potato dishes and even says he prefers 'cauli-rice' to white rice served with my curries.

                      wow you guys are soo amazingly creative... i only have raw broccoli or cauliflower with ranch dressing.. how boring that sounds now.. i am going to try all these recipes
