  • what's for supper?

    I'm making Tuscano Soup :yum: :hungry:

    TUSCANO SOUP
    1 pound Italian sausage
    1 small onion, diced, 2 1/2 ounces
    2 cloves garlic, minced
    3 cups chicken broth
    10 ounce package frozen chopped spinach, thawed
    1/2 cup heavy cream
    Salt and pepper, to taste
    Freshly grated parmesan cheese, optional
    Remove the sausage from its casings, if necessary. Brown the sausage in a 4-quart soup pot along with the onion and garlic; drain fat. Add the broth and undrained spinach; bring to a boil. Cover and simmer 30 minutes. Add the cream and simmer a few minutes until the cream is heated. Season to taste. Sprinkle a little parmesan cheese over each serving, if desired.

    The soup sounds wonderful~~thanks for sharing the recipe.

    I'm having a big fat juicy hamburger with Swiss cheese. Also fresh cukes & tomato.

      I'm also having chef's salad with romaine, cucumber, peppers, olives, cheese, boiled egg and shaved turkey

              I had a cheeseburger (no bun), broccoli dipped in sourcream and spinach dip, with a side of exercise!

                I use this recipe, grabbed it on one of the thousands of LowCarb blogs/boards I read. You can use any meat/veg combo - I usually use leftovers. Tonight I'll be using some turkey sausage, mushrooms, broccoli, and some bacon.

                Sausage Zuchini Frittata

                8 oz. fresh sausage (turkey or pork, your choice)
                2 Cups unpeeled zuchini, shredded
                2 scallions sliced
                1 tbsp.fresh basil, minced *
                1 tsp. Italian seasoning *
                4 large eggs
                1/3 cup heavy cream
                4 oz cream cheese cut into 1/2in cubes
                1 Cup shredded Mozzarella cheese
                1 Cup shredded sharp cheddar cheese

                Preheat oven to 325 degrees.

                Spray a 9 inch pie plate with cooking spray. (I use some of the drippings from frying bacon instead).

                Brown sausage, drain well and spread over the bottom of the pan. Top with shredded zucchini, then scallions, then seasonings.

                Wisk eggs and cream slightly, then pour over the sausage mixture. Sprinkle cream cheese cubes on top, then mozzarella and cheddar. Bake 45 min. or until a knife inserted in the middle comes out clean. Serve warm. Serves six.

                Per Serving:
                4g carbs, 1 g fiber, 18gr. protein, 38gr fat, 435 calories.

                  We had shrimp and broccoli alfredo without pasta. It was a little soupy, but filling.

                    Chicken.... maybe some green beans.

                    The kids are having what Im having or leftovers(spagetti/ alfreado/bojangles-lol ). I doubt they be hungry, they are at a birthday party till 7 tonight.

                        Yummm..pumpkin pie in a bowl. Thats sounds so good.

                        Parmesan Chicken and Broccoli. Kind of seems empty now without some pumpkin pie filling

                          I am having shredded beef with salsa verde, lettuce, tomato, avocado, and some queso fresco. Will be making it into tacos with lettuce instead of tortillas.

                            Hi,

                            Tonight I am trying something new, Big Mac Hamburger Pie on shredded lettuce. I am using Linda's White Castle Hamburger Pie recipe and then adding some SF ketchup and chopped sf pickles to the sauce. Here is Linda's recipe:
