2 pounds of ground beef....need recipe idea please....

  • 2 pounds of ground beef....need recipe idea please....

    I'm as my mom would say..am cooked out. I have 2 pounds of ground beef thawed and don't know what to do with it.

    Any suggestions?

    I usually split it into 2, 1-pound portions.

    Then I make half into feta/spinach burgers and half into taco meat for induction-friendly taco salads.

    If either sounds good, I'll give you recipes.

      I like to separate the meat into the very small disposable tin loaf pans and make meatloaf. (with the proper spices and cheese of course)

        I buy in bulk (3-4 pounds at a time). I divide them up into 1 pound portions and freeze them individually.

        Anyhow, I make meatballs out of them (I flavor them with garlic and herbs.) Freeze them and cook them for a fast meal or I float them in soup.

        I also sautee the ground meat with a little onion and garlic, add whatever spices I want (Tex-Mex, Italian, Chinese, etc.) Then I eat wrap the meat in lettuce leaves and eat them.

        Or I add a package of frozen spinach while I'm sauteeing the meat. Then I add a couple of beaten eggs, stirring and cooking until it comes together for a Joe's Special.

        Or I add a couple of ounces of cream cheese to the sauteeing ground meat, herbs and spices of my choice. Mix it all together and either eat it as is (like Hamburger Helper, I guess) or I layer it in a casserole with slices of turnips or eggplant or zucchini and bake it in the oven until it's golden brown and bubbly.

          i love to make stuffed pepprs, and really, its very simple.

          i cook up the ground beef with some yummy spices and chop up some cheese.

          take bell peppers and cut off the top and the inner parts. stuff em (yes, raw and with the skin on) and pop em in the oven to bake for abt 45 min.

          the freeze wonderfully, so i usualy make a looooooooot of them and defrost when i dont have time to cook
