Re: The only vegetable that I like is broccoli...

I micro asperagus with garlic salt and then rub them with butter and some parmesan cheese - yummy (also my favortie thing with broccoli and brussell sprouts)

Cook a piece of bacon to crisp and add a bit of chopped onion (not too much lots of carbs in onion) and then put in fresh spinach or blanched swiss chard with a pinch of salt (I love chard) and cook until softened. YUMMY!

What's the trick to turnips? I tried them this sumemr roasted like feaux potatoe wedges and they were AWFUL. Maybe it's an aquired taste. I like most veggies except cooked carrots and peas (lucky for me they are a no no) but turnips turned me off.

To get kids to like new foods they need to taste it about 6 times before they decide that they like it. So be like a kid and taste all the different kinds of veggies at least 6 times each before you write it off. Make sure you are seasoning with chicken broth, salt, pepper, garlic, etc... and start trying different herbs as well. You might be surprised what's good together. You need to get 2 cups of salad veggies every day in addition to your 'other' veggie which is 1 cup on induction. Good luck. and have fun with it! Trader Joes has all kinds of wonderful premade dips that are made with sour cream and they also make a onion and chive whipped cream cheese thats yummy with celery.

I am in the same boat. Try Jicama apple fries. Simply slice jicama like french fries, pan fry in olive oil. WHile they are still hot, shake them in a bag of spenda and cinnamon. It's awesome.

Those sound really good. I always wondered what those were (looked up Jicama and recognized them from my store).

Jicama seem to be a great adaptable veg - I only wish we could buy them in UK
Wondering how to get 'most' of your net carbs from your induction veggies?

I just googled this to see what it looks like and it looks like potato we really cant get this in england? im gonna be hunting for this now on. Is this acceptable on induction?

                    -----------------

To be honest i mostly eat salads or califlower (after i discovered califlower mash) its just so easy to make up something to eat with this whether it be chicken wings or omilette.

i did make a moussaka dish last week and was eating it for a few days, like lasagne but you subsitute the pasta for auberine (eggplant). was yummy!

Jicama is on the '2-cup' list aka 'salad veggies'. It is also known as konjak/Japanese yam bean/glucoman. I have never been able to find anyone selling it in UK, so if you do, please let us know!

I have found noodles made from it (called shiratake noodles) in Asian-type convenience stores, but not the actual veg itself.
