  • Fell off in Vegas - Need suggestions

    Okay - I just got back from a work convention in Vegas. I did okay for the first couple of days, but slowly declined over the last 3 days. Fortunately there was tons of walking, so only gained 2lbs., but worse to me is the cravings I have now. It's hard to get excited about the old foods I ate before the trip. I need some exciting and easy lunch and dinner ideas. I'm okay w/ the mock danish for b-fast, but it's lunch and dinner. I don't eat seafood - and I don't eat bikergoddess's pizza anymore. So, what are your old stand-bys for a quick and delicious lunch and dinner? Thanks everyone....

    forget that you need to get back to induction high fat foods, fatty cuts of meat, a hunk or 2 of cream cheese for a couple of days to get your deep ketosis appetite and craving control back then plot some tasty stuff to keep your weight loss from being boring cause you are very much in dander of jumping off the wagon for good and undoing all the improvements you have made to your health and body!

    SO eat egg or tuna salad, cream cheese panckes, cream cheese veggie dips, healthy oil salad dressings, dark meat poultry, cold water fish with a high fat sauce.

    After 2-3 days you should be back in deep ketosis and ready to take on the world with your Atkins WOE again.

      What great advice. You're right. I should simply go back to basics. I am going to boil some eggs for egg salad now. I searched around for a recipe for cream cheese pancakes, but can't find it - sounds delicious!!! Anyone know it? I'll also go get some dipping veggies for snacks w/ the dip. I can flip back into ketosis usually pretty quickly w/ my exercise regime, so I'll keep my fingers crossed. I feel like crap, can't wake up, tired all of the time and feel bloated - ugh. It's not going to be very hard to whip myself back into shape, I just want to feel better!! Thanks 2big!

        OREGONRENE'S "PANCAKES"
        2 egg yolks
        2 egg whites
        4 ounces cream cheese, softened

        In a small bowl, beat the egg whites until soft peaks form. In another small bowl, beat the cream cheese and the yolks until well blended. Gently fold in the egg whites a little at a time. There's no need to be very careful when folding in the egg whites. I just sort of stirred them in gently with a rubber spatula.

        Heat a little oil and butter in a nonstick skillet over medium-low heat. Don't let the butter get too dark. Ladle the batter into the hot oil, about one gravy ladle full for each. When well browned on the bottom, very carefully flip and cook the other side. They brown quite fast, so watch closely. Remove to a plate and keep warm. The pancakes are very puffy when first removed, but they flatten as they cool. Add more oil/butter to the pan for each batch, if necessary.

        Makes about 8-10 small pancakes

        Per Serving: 69 Calories; 6g Fat; 3g Protein; .5g Carbohydrate; 0g Dietary Fiber; .5g Net Carbs


        These really taste just like pancakes and would be great with sugar-free maple syrup or other topping.

          Thanks a bunch! That sounds amazing! I bet you could sprinkle a little bit of slenda and cinnamon on them as well - yum! I searched Linda's site, but couldn't find it. Thanks for taking the time to post it! I might have those for lunch :yes

            Vegas

            Wow, we went to Vegas in January for a business trip, first time I've been there and you are right you have to walk to get anywhere. I hadn't started Atkins yet, I was hauling 260 pounds around, boy did I get tired! And the buffets were unbelievable! One of our co-workers on the trip has been on Atkins for 5 years and he didn't cheat, I was really impressed with that, it's one of the reasons I decided to go on Atkins, he is 54 years old and he looks and acts younger than me! Did you see any shows while you were there? We saw Mama Mia. Did you get a chance to go to Hoover Dam?

              I usually keep homemade chicken salad in the fridge for a quick lunch or dinner.

              I make it with poached chicken breasts AND chicken thighs (4 thighs and 1 breast is the best "ratio" I think). I also add a couple stalks of celery that has been chopped, about 1/4 onion that has been grated, 1 T rosemary leaves, and enough mayo to moisten (usually about a cup). This makes about 4 servings. When ready to serve, I sprinkle with some lemon pepper.

              Now that I'm on the other fruit rung of OWL, I also add either some diced apple or a few grapes.

                Just wondering whether you plan on moving to OWL because you have 8 pounds to go and ure at goal.

                Otherwise good on u for getting back on track

                  I was going to suggest maybe eating 'clean' for a few days to get back in ketosis then starting to climb the OWL ladder.
                  Wondering how to get 'most' of your net carbs from your induction veggies?

                    I have to be honest - I'm scared about OWL. I've tried going up the rungs, but I'm either all or nothing....I can't get it figured out. I checked out the book from the library and am going to try it again once I'm back in ketosis. I just start getting scared when I start adding back in carbs. As for Vegas, I didn't get to see any shows, although Jerry Seinfeld was our entertainment one night, so I didn't really need to! It was an all work/no play type of convention. I didn't step foot in the Mandalay's 11 acre pool area - not ONCE in 4 days. I like Vegas, but the smoke and the noise get to me after a bit. Caesers is still my favorite place to stay. I didn't hit any buffets, but I did order a naughty breakfast twice through room service.....bad me!!!
