I'm not - AND it's totally induction friendly! 
I wanted something "new" for breakfast as i do get sick of eggs.
So last night I was looking up stuff about cinnamon and I came across "sweet eggs"...
Not sure of how many of you have ever had this but ohmygod it is REALLY good! and it TOTALLY feels like I'm "cheating" and having a pancake!
basically I took:
4 egg whites (not sure about adding in the yolks with this, but you probably could - i know it'd be better for fat content to add them...)
1 tbsp heavy cream
2 tsp splenda (I think that's one packet - but next time i may only use 1 tsp)
1/2 tsp vanilla extract
1/2 tsp almond extract
cinnamon
nutmeg (which i didn't have)...
But you mix it all together in a bowl and then place it in a small round frying pan - leave it in there until the top has set enough to flip without breaking - flip when you deem it's ready and cook for another few minutes...
and then slide onto your plate and it LOOKS like a pancake. It SMELLS incredible and tastes AWESOME!!
I had this for breakfast this morning with my sausage patties and here are the carb counts:
4 egg whites = 1 g carbs / 2.4 g fat (0.25 carbs per white - 0.6 g fat)
1 tbsp cream = 0 g carbs / 5 g fat
2 tsp splenda = 1 g carbs / 0 g fat
1/2 tsp im. vanilla extract = 0 g carbs / 0 fat (this im not sure of as it's only 1/2 tsp and thedailyplate.com says there's 0.3 g per TBSP...)
1/2 tsp almond extract = 0 g carbs / 0 fat (per the dailyplate.com)
cinnamon
TOTAL carbs = 2 g carbs / 7.4 g fat
and ohMY was it FABULOUS!!!!!
