  • Pork roast recipe?

    I would have posted this in recipe requests, but I need to start the roast soon or it won't be done by dinner time. Hoping to get a quicker response in here. Okay, so I have this enormous pork roast thawed in my fridge and have no idea what to do with it. I usually cook them with loads of granny smith apples, but now I can't do that. Any thoughts on seasonings? I'm looking for something kinda sweet like, not garlicy. I'll consider garlicy if it sounds good though.

    I do have some Atkins Morning Start apple drink mix.....would that maybe work?

        Here's a sauce that looks sweet if you have a lowcarb or sugar free ketchup:

        Pork in Sweet & Sour Sauce - Low Carbohydrate Atkins Diet Recipe

        1 lb pork tenderloin
        SWEET & SOUR SAUCE
        3/4 cup water
        1/3 cup ketchup (unsweetened)
        1/3 cup vinegar
        1 T soy sauce
        3/4 cup Splenda
        xanthan gum (about 1 t)

        Cut the pork into 3/4" slices and pound until thin. Heat oil in pan, sprinkle with salt, pepper, and Old Bay seasoning. Saute pork in oil few minutes until done. Remove from pan. Top with Sweet & Sour sauce and serve (over Faux Rice).

        SAUCE: Combine water, ketchup, vinegar and soy. Heat til boiling. Add guar gum to thicken. Take off heat and stir in Equal. Pour over meat.
        Serves 2 (1/2 the pork and 1/4 cup S&S Sauce each) @ 7.5 carbs, trace fiber, 235 Calories, 6 fat, 36 protein.

        TOTAL S&S SAUCE(1 cup): 30 carb, trace fiber, 122 Calories, trace fat, 1 protein. (I'd go easy on the sauce since it's fairly high carb)

          I throw it in the crockpot in the morning, throw in some crushed garlic and "Montreal Steak" seasoning, and let it cook alllll day. By late afternoon it's falling apart.

          I know this doesn't help you now, but that's how I do it....

            I know this is way too late as well, but I like to cut deep slits in it and stuff them with cloves of garlic, then layer onions on top of it, S&P, and roast till tender. Probably everybody does it like that, but that's how we like it.

              I ended up using the Atkins Morning Start apple juice, cause I had to have apple flavored sweet pork for some reason. Probably cause that's how I've always had it. I also added a little Atkins BBQ on my plate, and it was REALLY good!
