    in extended induction is it ok to eat this bread
    Ingredients:

    • 2 cups flax seed meal
    • 1 Tablespoon baking powder
    • 1 teaspoon salt
    • 1-2 Tablespoons sweetening power from artificial sweetener
    • 5 beaten eggs
    • 1/2 cup water
    • 1/3 cup oil

    Preparation:

    Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.

    1) Mix dry ingredients well -- a whisk works well.

    2) Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.

    3) Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)

    4) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).

    5) Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.

    6) Cool and cut into whatever size slices you want. You don't need a sharp knife; I usually just cut it with a spatula.

    At 12 servings, each piece of bread has less than one gram of carbohydrate -- .8 to be exact -- plus 5 grams of fiber.

    Okay, there are 16 TBSP in a cup. So there will be 32 TBSP of flax in your loaf. If you eat one slice, you will consume 2.6 TBSP of flax. This is not really way outside sensible guidelines for flax. If you eat two slices, you will be way over.

    In choosing how you will use flax in induction, you have to choose how to interpret a couple of passages. Page 76 paragraph one recommends a minimum of fiber, be it flax, psyllium, or wheat brand, of 1 TBSP for everyone every day.

    Rule 12 of induction, page 124, indicates that if you are constipated you may use a TBSP 'or more' of your fiber of choice. It actually does not set an upper limit, 'or more' is pretty broad. However, it is safe to assume he didn't mean 5 or 6.

    I developed a recipe similar to yours years back, but held myself to half a slice at a time and stored it in the freezer. Mine used butter for part of the fat, but the same count of eggs!

    A half a slice of bread becomes a very attractive snack slathered with cream cheese!
