Re: Whatcha' Eatin' today?
This morning I made an omelette with two eggs, mushrooms, spinach, red pepper, onion, cheese and Canadian Bacon and a cup of black coffee.
At lunch I had a spinach salad with chopped hard boiled egg and turkey and a glass of iced tea.
Dinner will be grilled shrimp, tomato and cucumber salad with avocado, stir fried broccoli with red pepper.

Re: Whatcha' Eatin' today?
Seems to be an omelette kind of day all round!!
I had a cheese and ham omelette for lunch with salad
Supper was courgettes (zucchini) topped with bacon and grated parmesan.Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

Re: Whatcha' Eatin' today?
Breakfast - 2 scrambled eggs cooked with real butter and topped with deli deluxe american cheese
Lunch - 1 slice bologna, 1 slice jack cheese
Dinner - 2 cups salad, 1 tbsp thousand island dressing
Bedtime - 2 ¼ hamburger patties topped with 2 oz jack cheese
I would eat another cup of veggies but I take ½ tbsp honey every day in order to swallow my pills so that limits how many carbs I have left...

Re: Whatcha' Eatin' today?
I had a fried egg and some sausage (treated myself to a little squirt of sugar free maple syrup on the sausage), a chicken breast I'd fried in bacon grease earlier in the week and a nice pumpkin treat for lunch, and for dinner a spinach salad with some caesar dressing and two hamburger patties with cheese, mayo and 1 carb ketchup. Not my best day but I took a laxative last night and wanted to treat myself a little in light of the pain I had up until 3 in the afternoon. Gentle, overnight relief my foot.

Re: Whatcha' Eatin' today?
Making notes here, gang! Most days I read this board with my shopping list open in another window. <grin>
This morning I had ... lessee ... pan-fried about 1/4 cup of diced onion in a tablespoon of sesame oil with a sprinkle of garlic powder and a pinch of salt (trying to cut back on the sodium, but it was 3am and I was hungry!) ... scrambled in 3 eggs and an ounce of cream cheese ... tossed half a cup of cherry tomatoes into the mess just before I took it out of the pan ... omnomnomnom ... moving day today, so lord knows what lunch and supper will look like, but I promise it'll be in the allowed list. <slightly frazzled look>

Re: Whatcha' Eatin' today?
Breakfast - salad greens (w/ 0 carb ginger dressing) and 2 eggs w/ flax drink
Snack - string cheese
Lunch - boiled shrimp, dipped in homemade jalapeno mayonnaise
Dinner - going to Japanese steakhouse. will pass on the salad because I'll be at my veggie limit. Will skip the miso soup, because i can't figure out the number of carbs in it (somewhere between 3-9 I've seen). Will get filet plus the veggies that come with it (mushrooms, onions and zucchini). While I'm not keen on the sodium/soy sauce intake with this meal, it's a family dinner so I'll suck it (and numerous glasses of club soda) up.
Snack - probably not - the dinner is very filling.- M/37

Re: Whatcha' Eatin' today?
Oh Lord Almighty! I have stayed away from bacon so far because of the salt, and usually don't eat alot of bacon anyway. But today I ran out the door going to work and didn't have time to grab anything but a partial pack of Superior Thick Sliced Bacon. I wasn't really looking forward to it even though I knew it would be ok. Then I went to lunch... WOW! MAN was that good!! Tonight I think I'll make some chicken stir fry so I can get some veggies in. And tomorrow is my two week weigh in

Re: Whatcha' Eatin' today?
Breakfast was scrambled eggs and a sliced orange pepper. It seems that I prefer to have raw, sliced, veggies with my breakfast rather than adding them in.
Lunch was grilled steak and asparagus.
Dinner will be baked chicken and steamed broccoli.
