  • QUestion about veggies & carbs

    When eating the 2 (and one cup other veggie) or three cups of salad a day when following induction, my carbs usually don't come near the 20 per day. I saw a post for a veggie challange that wanted you to attain 12grams of carbs from veggies. How do u do that when on Induction and having 2 to 3 cups of greens? I do lettuce (Red Leaf) mostly, is that not correct ?

    I am the one who heads up the Semi Annual boardwide Veggie Challenge, and I can tell you this - YES, it is quite possible to get 12g of net carbs from Induction level veggies. Don't limit yourself to greens and lettuce.

    For example:
    1 cup of jicama (Salad veggie) = 5g net carbs
    1 cup of red bellpepper, raw, cut into strips (Salad veggie) = 6g net carbs
    1/2 can of pumpkin/which is .88cups (Other veggie) = 7g net carbs
    TOTAL: 18g net veggie carbs

        About veggies - Before Atkins, I wouldn't touch a veggie with a 10 foot pole. And on my 1st attempt at Atkins (see stats below), I did not put forth the effort to break out of my box and make myself try new veggies. I got to where I was eating a lot of nuts and dairy, but not eating many veggies. I think that is one of the main reasons why I fizzled out on that attempt. Atkins really is a change of lifestyle... it's not trying to eat as closely as you can to how you used to eat. So on this attempt, I tried tons of new veggies. I can't believe how much better the plan works when you eat veggies! Unbelievable!!

          I have a pumpkin recipe that I like. It is more of a dessert I guess. I eat it for breakfast sometimes. Is that ok?
          I think I got it from the recipe section here.

          1/2 c. pumpkin
          1 T. butter
          1 T. heavy cream
          1 packet splenda
          1/4 tsp pumpkin pie spice

          (stir, microwave, stir, microwave...til smooth and heated..about 45 sec total for me).

          I keep track of the cream and splenda too. Do I need more protein?

            Sure, you can have pumpkin for breakfast. I used to eat it almost every day! Yeah, the protein is pretty low in it... once I got to rung 3, I started tossing some natural almonds into it and that helped, but it is still fat-heavy. I never worried about it, as long as I made sure to have adequate protein the rest of the day.

              If you're not eating enough veggies then you're not doing atkins... you NEED those veggies, you NEED those vitamins and minerals, you NEED that fiber, and with the myriad of available veggies (plenty of them become available after induction) there's no reason to get bored

                    Ok I have an issue here.

                    I don't drink coffee, so I have no need for cream. I don't drink anything that isn't water (occasionally the crystal light ones, but gave those up last week)

                    If I add up ALL my carbs in a day, assuming I have (which 99% of the time I do) a salad with my lunch meat, and green beans or broccoli or tomato or whatever veggie I'm eating with my dinner meat, 3 oz of cheese, 2 eggs and bacon for breakfast I am getting MAYBE 15 carbs a day.

                    Since I can't any anymore cheese, and I can't have anymore veggies since I've had my allotted cups of them, and I don't do sweetners, and I count EVERYTHING, even average UP on eggs and such for carb content.

                    WHAT am I suppose to eat to get to 20 carbs?

                    I know there are other exotic veggies, but being blunt and honest Aktins is a very expensive diet already compared to eating high carb foods. I can't just spend 10 bucks on a meal all the time. So realistically, I'm pretty set into the veggies I eat (in addition to hating several of the veggies on the list just out right, find them terribly distasteful)

                    I realize a lot of people probably get in a few carbs from counting sugar substitutes like splenda, but I don't get those. I don't get the ones from cream either, nor am I getting any from lemon or lime juice.

                    I don't mind the foods I eat. I like them rather a lot actually. I'm just wondering if I should be eating another cup of SOMETHING veggie oriented???
                    Mini goals:
                    1st - 209 lbs - Smaller then my husband!
                    2nd - 202 lbs - BMI no longer considered obese
                    3rd - 199 lbs - No longer have to say 2 in my weight!
                    5th - 168 lbs - BMI no longer considered overweight

                      It is OKAY if you don't make it to 20 carbs. 20 is the number you stay under for induction, you don't have to reach it. 15 is just fine, really!

                      Oh and I like cream cheese instead of cream in my pumpkin treat! Just soften it and the butter slightly in the microwave and mix!

                          I lost 130lbs originally and gained some back and have started over. I just want to make sure I do it right this time and get all the way through!! =)

                          I don't want to have to ever start over again lol.

                            As momtomany1 said Isa, 20 net carbs is the maximum for induction, so as long as you are getting 'most' of however many net carbs you do eat from your veggies then you are doing fine

                            When you move to OWL you will add 5 net carbs of veg to your average net carbs from induction, so maybe will be aiming at 20 net carbs for rung 1 of OWL.

                              Thank you both for your replies. I'll look forward to OWL and moving up the veggie rung some. As I said I like what I'm eating, I like the veggies that I already eat and adding in a bit more and perhaps some more variety will be nice.
