I am starting to struggle to keep up with my veggie intake. Reason is I'm just not hungry throughout the day. I would do fine just snacking. But I know that I need at least 12 carbs a day to come from veggies and I am having a HARD time keeping up. Maybe I should have my 2 cups of salad and then veggies with higher carb count to make the rest of my carbs. Any suggestions??

I think it is a good idea to make more of your allowed 3 cups by having one cup from the 'other' list. One cup of chopped raw onions is about 11 net carbs, one cup raw of pumpkin is about 7 net carbs, so using half a cup of each during the day, maybe sautééing the onions in butter to serve with cooked meat and cooking the pumpkin as a sort of dessert would get you 9 net carbs!
You could also choose your 'salad' vegetables from the higher carb ones on the salad veg list too. Lettuce is basically chewy water with less nutrients than others on the list.Wondering how to get 'most' of your net carbs from your induction veggies?

The longer I'm on Atkins, the more I am eating in the earlier part of the day and eating lightly at my evening meal. I love omelettes or egg scrambles or quiche for breakfast so I add peppers and mushrooms and onions and tomatoes to incorporate more carbs.
By the time evening comes around, I'm usually eating a spinach salad or some other leafy green with a smaller amount of protein (usually seafood or fish or chicken) or incorporating my dinner into a stir fry.
When you are alone in your head, you are in a bad neighborhood.

I also have that problem since i started the diet my appetie has really lowered i have 1 meal a day which i force myself to eat half i bin and i snack abit during the day i don't do it to speed up weight loss i just can't eat like before its cut on my appetie but i try to drink alot.

i agree with Elizellen, take advantage of the veggies with the higher carbs. jicama and tomates are a couple other good choices, each are about 5.5 carbs for a 1/2 cup. jicama is great if you cut them up like french fries and fry them. they are really good raw too, like in a salad or just as a snack with a little ranch dressing.
