  • Coconut essence??

    I was wondering if I can use coconut essence to make atkins friendly thai food...
    Height : 5"3
    Starting Weight : 166lbs
    Goal Weight : 115 lbs

    Motivation is a fire from within. If someone else tries to light that fire under you, chances are it will burn very briefly.

    Starting weight: 75.5kgs
    Mini Goal weight : 69 kgs
    1st Goal weight: 64 kgs
    2nd Goal weight : 60 kgs
    3rd Goal weight : 55 kgs
    4th Goal weight : 50 kgs

    I think the essence would be fine to add (alchol free)
    So what recipe are you trying to make.

      I am trying to make Thai red curry but omit palm sugar
      • 3 shallots, sliced
      • 1 stalk lemongrass
      • 1-3 red chillies
      • 3 cloves garlic
      • 1 thumb-size piece galangal, peeled and sliced
      • ΒΌ tsp. white pepper (may be substituted with black pepper)
      • 1 tsp. ground cumin
      • 2 Tbsp. Ground coriander seeds,
      • 3 Tbsp. fish sauce
      • 1 kaffir lime leaf
      • 1 tsp. shrimp paste (optional if vegetarian)
      • 1 tsp. splenda
      • 1 1/2 Tbsp. regular chilli powder
      • 1/3 cup cream with water & mix coconut essence

      I will then fry the paste in oil, add 1 cup of water mixed with cream (1/4 cream), add lemongrass and vegetables like beans and chicken. Leave it to boil till sauce thickens a bit.
      So that's the plan at this point

        It does sound good. Not always easy to convert Atkins to ethnic cooking. But I think it is worth a try.
        Is galagal root carby?
        With beans you mean string beans, right? Because kidney beans or lima beans would not be an induction food

          It is kind of difficult converting ethnic stuff for Atkins but I thought worth a try!! Thai & Indian are two cuisines that I am trying to make Atkins friendly.

          Galangal is ginger but a bit more bitter & yes no kindey or lima beans only string beans.

          I hope this hits my Thai food craving especially when my better half is gorging his down !
