  • Manufacturing Cream???

    Does anyone know what this is??? Is it different than heavy cream? A coffee shop I go to has only half and half and what they call manufacturing cream for their coffee.....(Made by Alta Dena). They say manufacturing cream is a heavy cream....but I want to know for sure that it is not something full of hidden carbs. Maybe our mods know?

    I have never heard of it before and I looked on google and although it mentions it, it didn't say what it was. Its included in the same section as cream and half and half and heavy cream so I suspect that its okay. Hope someone else comes in and can help

        I noticed on the website Irishred found that though they list the nutrition info they don't list the ingredients.
        Maybe it would be an idea to email the company and ask what exactly is on it - I noticed in their faq's that they state
        We use ingredients approved by the Natural Food Industry, such as natural sweeteners, honey and fructose
        so it if is a sweet product it may have honey in it!

          Here is what Lynne Rossetto Kasper of the Splendid Table radio show (one of my favorites) had to say:
          Moderator: Lynne, we've got another one from the Splendid Table Forum - Nancy Smith wonders, what is "manufacturing cream"? She's got a vague recipe with that listed, but has no idea what it is. Her source said that it comes in boxes and doesn't need refrigeration.

          Lynne: Nancy - I've never heard of it, but when you describe it, it sounds like the sterilized cream you find in Europe. For my money, it always tastes god-awful. In place of this, I would use good, fresh, heavy cream, ideally organic, and if there is a heaven, without any carrageenan or other goodies added to it. If it's good cream, it doesn't need that. I'm really fed up with all the stabilizing, thickening, etc. ingredients added to food. No food should have any additive you can't pronounce.

            Manufacturing cream is simply cream with a higher fat content - 40%, I think. I don't know why it's named as such. I purchase mine at
            Trader Joe's. It probably cheaper than Alta Dena's and it's divine.

              Wow! Thanks for all of the great information ! I definitely have a good idea of what it is...It is not sweet at all....and the brand the coffee house I go to uses is Alta Dena!

                Really great post. I'm going to try it when I get home. I can buy this heavy cream in a box here in Japan but its made in the Philipeans and has no ingredients listed. It looks like cream, tastes like cream but since I wasn't sure what was in it, I haven't purchased it again
