I have 3 romaine hearts in the fridge that I must eat in between today and Tuesday at the latest because they’ve been in there for 4 days already and I don’t want to have to throw them out. The problem is that the cold weather is here and I don’t feel like having a salad. Anyone has a good winter salad recipe? Something warm and yummy please : )

Well, I'm late on replying but I had this recipe in my files. The original recipe makes a lot but you'll get the idea of what ingredients to use if you're interested.
Grilled Hearts of Romaine
Something different to do with that lettuce!
Ingredients
- ¼ cup olive oil
- juice of ½ lemon
- 1 clove garlic clove
- 2 heads hearts of romaine
- 1 dash kosher salt
- ½ cup parmesan
- black pepper, to taste
Directions
- Mix together oil, lemon juice, and finely minced garlic clove.
- Cut hearts of romaine in half lengthwise and bruish with marinade mixture. Sprinkle with salt and pepper.
- Refrigerate until just before grilling.
- Grill just a couple of minutes until leaves start to wilt. Then turn over and grill a few more minutes.
- Dust with the grated cheese and enjoy.

I’ll probably try it tonight or tomorrow. Yesterday I cleaned the 3 romaine hearts I had and threw out a lot of it - yes I waited too long. Still, I have lettuce for the rest of the week.
Yesterday I had my two first ground beef lettuce wraps for breakfast ~ YUM!
And for lunch I heated 2 cups of chopped lettuce in the microwave and covered them with a Roquefort sauce ~ double YUM! (I also had chicken, don't think I'm starving myself)
